Well for one it makes for easier sharpening and depending on the grind angle of the sharpener edge, the overall angle can be reduced making for a sharper edge. A custom knife maker put here in California who has since passed, used only to do the kind of grind. Phil Hartsfield Sr.

That type of blade will penetrate/stab through leather etc. extremely easy...One side flat = no resistance.
