-1½ Lbs boneless chicken breasts -Salt and freshly ground black pepper -2 Eggs -1 Cup seasoned Italian bread crumbs -¼ Cup extra-virgin olive oil FOR THE SAUCE -1 Cup chicken stock -1 Cup Pinot Grigio -2 Tbs fresh lemon juice, from 1 lemon -3 Tbs brined capers -3 Tbs unsalted butter -1 Tsp Salt and pepper -¼ Cup chopped fresh Italian parsley -1Tbs Flour 1.Pre heat oven at 350 degrees. Now using a very sharp knife, slice each chicken breast in half horizontally. One at a time. You can leave your chicken breast whole without slicing them as well. Now place the chicken breasts on plastic wrap & pound them to an even ¼-inch thickness. 2. Beat the eggs in a large, shallow bowl. In another large, shallow bowl, pour in your bread crumbs. Dip each chicken breast first in the egg mixture, turning to coat evenly and letting any excess egg drip off, and then into the bread crumbs, press in breadcrumbs & turning to coat evenly. 3. Heat the olive oil in a large sauté pan over medium-high heat. When the oil is hot and shimmering, add the chicken to the pan and cook until the first side is golden brown, 2 to 3 minutes. Flip the chicken and cook until the second side is golden, about 2 minutes more. Transfer the chicken to the prepared baking sheet and place in the oven while you make the sauce. (Note: the chicken should be almost fully cooked at this point 150-165 degrees internal temperature. Don't leave it in the oven for more than 5 minutes or it will overcook.) 4. Discard any excess oil from the pan. Add the wine & stock & cook boiling for 5 mins now add your lemon juice, and capers and bring to a boil, scraping up any brown bits from the pan. Gently boil for about two minutes, until slightly reduced .(slowly add ½-1 tbs of flour to thicken your sauce if need be whisking constantly till well combined till it’s your desired texture ) Off the heat, swirl in the butter, followed by the parsley. Taste and adjust seasoning with salt and pepper, if necessary. Remove the chicken from the oven and place in sauce & coat evenly or place on a plate with pasta of your choice & spoon the sauce over top & garnish with Parmesan cheese & parsley. #Fyp #cookingtutorial
