Hi, I'm trying to make this shredded phyllo dough because I can't find any Kataifi dough for a Kunafa recipe. Would you be able to tell me if the phyllo dough needs to be as crisp as your end result or if it should be a little less hardened for the Kunafa recipe? I'm making the Kunafa for a school project where I present this dish on Monday, January 14th, 2019. Anyone that has any info please don't be shy, I would very much appreciate any help :) Here is the recipe I'm using for the Kunafa. kzbin.info/www/bejne/q3XWoqKZmtCXmck

as salaam alaikum.. hie.. i tried ur recipe but with my own inventions which is more convienient.. firstly the quantity of oil is too much for the mixture.. when i mixed everything a layer of oil formed on the surface.. so the next time i make it i'll try using 1 or 1 n 1/2 tbsp of oil instead of 2 tbspn.. secondly instead of syringe i made a piping cone of plastic which i believe worked better then syringe.. by using the piping method the process became faster.. any way.. thanks a ton for sharing this recipe with us it was of great help.. thanks once again..!

For biscuits.. 350 g salted cold butter or margarine,500g plain flour- Mix and knead this till it is a soft ball. Roll out to even size and thickness biscuits, place on tray for baking on 160 deg celcius. check every now and then after 10 mins..When it is ready the biscuits is hard when you touch with a finger but not at all golden.l eave to cool and then sandwich two biscuits with strawberry or similar jam.For glace icing- add 250g icing sugar to 1 tbsp water or milk, keep on stirring, if it is not mixing add little by little water. Do not forget colouring and a flavouring will liquify the icing even more so be careful with how much water you add. the finished consistency should be able to coat a spoon and roll slowly and not fast. Coat the biscuits using a spoon by dropping a dollop of icing in the centre,. You can assist the icing to roll down the Sides to coat the surface entirely by using the spoon to push the icing from the centre slowly to the outside. leave to drip through a cooling rack with something underneath to catch the excess icing.
