Make sure the yeast is not expired , follow the exact measures and follow the instructions i have used this recipe for years

Thank you so much. For 3 years I make use of this recept. A lot of questions and remarks about the time of fermentation. In this video 12 hours with room temp, but noticed also 2 days in fridge etc. My question is: how do you recognise a fermentation after the 4 times folding and before shaping in the basket is correct, so not over or under fermented? I would be delighted if someone could give an answer rhat will helps me understanding the fermentation process. Thank you so much.

I do this recipe almost every week, I use 1 or 2 Habanero from my garden instead of jalapeños. It's so good on avocado and eggs toasts!😋

I just made tamales for the first time. They came out great but I was grumbling about there being a faster way and decided i probably wouldn’t make them again. I even had left over batter that I gave up on putting in the husks. This has changed my mind. Now I can used the remaining batter! Thank you!!!

This was the first recipe that really worked for me. I'm making sourdough now but I probably would have given up without my first success with this recipe. i'm here because I just sent it to another person who wants to make bread and having some trouble

I followed instructions exactly and my bread came out nice but it was not crispy dark brown on top and it did not split open and look as beautiful as yours. Should I raise the heat to 500 degrees, use pan of water to create more steam? Not sure the water helps if the bread is in a dutch oven.

I assume you're pre-heating your Dutch oven prior to putting your dough inside and you're taking the cover off of the Dutch oven the last ten minutes of bake time. If so, I would use an oven thermometer to verify that your oven temperature is indeed 475 degrees. Also, putting the Dutch oven in the lower racks helps make for darker loaves.

Get a infrared laser temp gun for like <$20 and check your oven temp. It's good to have. also my oven takes at least 90 min to get to temp.

I have the book you show at the end. It’s a fabulous book for home bread makers. The resultant bread looks professional, tastes wonderful and is beyond description when toasted. I enjoy a loaf for days. 🤪

When I bake bread in my dutch oven, the bottom gets very dark and even blackened at times. How do you keep the bottoms of your loaves from coming out dark or even black?

When I first started making Dutch oven breads, they would burn, so I bought an oven thermometer and it turned out my old fashioned oven temp dial was 100 degrees F off, so I was cooking way too hot. You may want to check your oven temp for accuracy.

The only change to the methodology shown here that I make is to use oven baking paper. I use that to lower the dough into the Dutch oven. I make a long piece and then a square piece (2 thicknesses under the actual dough). That stops it burning on the bottom.

I was having the same issue so then I started putting the Dutch oven on top of an Airbake pan and that stopped the bottom of my loaves from getting dark/black. Hope this helps.

I have made it a couple of times. For me the result has been very sensitive to the quality of the flour. High protein flour with or without whole grain gave the best result

I just made my first loaf of yeast bread since 1973 HomeEc class (different recipe than this one). I was also using the gas oven in my new apartment for the first time. When I opened the preheated oven to remove the Dutch oven, the smoke alarm went off. At 5 am. 😳 I put the bread in the pot, covered, into the oven. Smoke alarm went off again. 😖 And one more time. 🤬 The oven has a vent fan and is next to a window. Duh! In and open. Did I mention it’s 5am? I caught a very bad cold (if I were this good a catcher in high school, maybe I would have made the softball team!). Anyhoo, when I’m over this, gonna hit up the local food coop, and make me some rustic bread! I honestly can’t wait to try your “stretch and fold four times” method!

I used exact same instruction. My dough became watery! I used the instructions about the cooking process. When it is finished, it was still uncooked 😭😢 I sum, I'm not happy!

I noticed the recipe calls for 1g instant yeast… if I’m using fast action dried yeast, should I add more, is there a difference? I just made one loaf of bread and the recipe called for 7g yeast, so that’s why 1g seems like so little to me!

The reason for the small amount of yeast is to ferment slowly, it yields better flavor. You have to keep in mind that although this recipe gives you a timetable you have to take into account that the climate in your area might be different and it will affect how fast or slow your dough rises.

I use the same recipe but even after standing overnight my dough is very wet and loose compared to this dough so I'm wondering if I'm using too high of hydration even though I'm using 78% cuz my dough is definitely not together like this one if I put it on the counter just spreads and flows all over the place can you give me some suggestions of what I'm doing wrong cuz I'd like my dough to be like amore together kneeded bread dough like you have.

More than likely your dough is over proofed, if you live in warm climate your dough will prove faster and become loose

in the morning do a shape like in the video... then rest 10 minutes and do a final shape to get the dough a bit tighter.... then proof for 45 minutes and bake... (be gentle to not degas the dough)

This is actually genius. Same flavors but easier to make. I did mine in small Pyrex dishes in a bain marie as seen here. What made it so superior is I got all the flavors of tamale and it was way faster. Plus it was fun to experiment with fillings (cheese and green chilis, red chili beef, leftover chicken even). The presentation seen here is amazing. Well done chef.

You'll need to buy one. You don't need to buy an expensive brand as there are plenty of cheap pots out there. Just need to ensure it's suitable for the temperature required including the handle.

Whatever you do, make sure that it’s exactly a 4qt pot. I have a large Dutch oven (9 qr) and it was painful. I got me A Lagistina 4 qt and the results mirror those in this winderfyvudeo
