Not to say change your eays but you might want to try running a screwdriver along the skull and pull the ears the same way you did the tail and front legs? Leaving the ear cartalidge on the head is alot easier than trying to cut it out afterwards i think

Get a cheap carbide keychain sharpener. Just pull it though a couple times to keep a razor edge. That honing rod is the exact wrong tool for your needs.
