@Italianbottlesbites I think the people who are holding a camera and talking is always risky cause they usually are much louder(a lapel mic can help you with that) and unless they bring value to the content with what they say, it can get annoying quickly. It's a fine balance and you'll absolutely never please everyone. You acknowledging my comment shows you care about viewers which is good, I wish you luck cause you're doing a good job.

Cool video and great idea. I've been making pizza at home for a little over a year now. Started off making Chicago thin crust tavern style pizza, then Neopolitan after buying an outdoor oven. I've yet to try biga or poolish. It's surprisingly simple. I've been unconvinced it's worth the extra steps, so I am eagerly awaiting the follow-up video. I just hope my 3.5 quart KitchenAid mixer can handle the larger dough ball. I think I'll a biga with my next batch of dough.

Thanks for watching. Yeah, I think you'll see the difference with the biga. The structure of the dough will be very nice. Tavern style is probably our favorite. I've done a couple of videos on Tavern style. One was cooking it outside in my ArcXL.

@@Italianbottlesbites Check out the Central Otago region of New Zealand for Pinot Noir. Not coincidently, at the same latitude as Oregon's Willamette Valley, just in the Southern Hemisphere. Willamette Valley at 45° N Central Otago at 45° S Burgundy at 47° N This is what makes wine so interesting!

I've not made it for 5 people. You would need 5 eggs and one extra yolk. I would recommend adding cheese a qtr cup at a time and mixing until you get to the pasty texture you saw in the video. A 8oz block should be enough to grate and use for this dish, with some left for finishing the pasta.

Great teacher. I have been struggling a bit with my Arc Xl for longer bake more NY style. I see some kill flame at launch but you were at 734f and made it look so easy not to burn the crust. Where did you have the flame? How was the bottom?

Long story short, I lived in the Chicago area for 49 of my 56 years. Since moving to Colorado pizza here sucks and is NOTHING like Chicago style pizza. I've learned to make my own tavern style Chicago pizza and refuse to buy pizza in this state ever again. I even did a video on it and it was Heaven the first time I bit into the first one I've made. After mastering the tavern style I wanted to learn how to make the Chicago style deep dish pizza. After watching many videos I stumbled across your video of the type of pizza you are making. Even though it's not the deep dish I was looking for I still wanted to watch your video making the pizza I saw in your thumbnail. There are many different types of pizza's and they are all good. I'll be making a 16" version of the Chicago Style Stuffed Deep Dish Pizza. Once I get one made under my belt I will also probably do a video on it as well. FYI...we do have a Giordano's Pizza in downtown Denver and we ate their recently to gauge how their pizza was. Let me say this, even though their pizza is good it has really gotten less thick in size that I can remember over the years. This is why I will learn how to make my own like the tavern style (my favorite type of pizza) that I learned how to master 🙂

​@@Italianbottlesbites I'm just waiting for my 16 x 2.5 LloydPan to get here that I've had on order for a few days and I may not do a trial run first and just make it like you did with your outdoor pizza oven in your one video. Whatever happens happens. My first tavern style came out way better than I expected. I love to see your video on it one day. I've pretty much just breezed through your pizza play list. I make my dough a little less hydration for the tavern style but I'm going to make a different type dough for the deep dish. I will definitely try your style of the "poolish" dough method to make just a "regular" type pizza...very intriguing and seems simple to make. Takes a bit of time, which is understandable the way you explained it where mine just sits in the fridge over night.

The Lloyd's pans are fantastic. I have the Detroit, Tavern, and Grandma's. I love the 25 hr poolish that I use, followed by a 48 hr cold fermentation. I've not done a biga, that's something I need to try and then do a video on.

I'm a Chicago native. Tavern style, thin crust pizza is my jam. I've been eating it weekly for 60+ years. I sstarted making my own in 2023. I use a pizza steel in my home oven rather than a pan. Turns out great. Wife said "you're not going to be running the oven in the summer while we have the AC running, are you?" Bought an Arc XL. It's tricky. Temp control is key. The crust needs time without the burner in order to get right crisp. At first, I thought it was impossible, so I did a deep dive into neopolitan pizzas. They're good,but thin, crispy crusts will always be my fave. Great video. Subscribed.

Thanks for subscribing. I know in Chicago, Tavern is the choice for locals over deep dish. You make your Tavern pizza on a steel, I'm impressed. I do like the pan, but may have to try a steel. I do like the olive oil in the pan to get that extra crispy bottom. Down here in Houston, it's finally backyard cooking season, finally below 90° and low humidity. I'll be doing more pizza videos

Great video presentation. Information is very informative. One thing that I have done when using Lloyd's pan in Gozney oven is to remove pizza from the pan for the last minute or two to crisp up the bottom while finishing the top. Always does the trick with my Roman, Detroit and Sicilian pans.

Excellent video Rob! Thanks for sharing your knowledge. I am just getting into making my own pizza (inspired by the Gozney ARC XL). I am going to make your recipe as my first attempt! What size are those black food prep containers that you use to cold ferment the dough? 24oz or smaller?

They are 18oz. They easily hold up to 320g dough balls. I usually don't make bigger that 300g dough balls.

This is such great content for pizza makers. So much excellent info and tips. I've been making dough since the covid lockdowns and only now have gotten my dough to where i want it (it's 60% hydration biga, 3 day cold ferment), yet i've learned a lot from this and i'm only halfway through the video

Good video, saddly i couldn't watch it all because your voice is coming from only one side of the speakers, all the other sounds are fine but your voice only comes out on the left channel and for someone using headphones it's quite not pleasent to hear

Thanks for the comment. I figured out the issue, my audio was in Mono and not Stereo. It's fixed for future videos.

Small meatballs are where it's at! Looks great, I'm hungry. A couple suggestions- the broiler is a great way to brown many meatballs at once with less mess and fuss, you could do it right on the sheetpan you form them on. And freezing the balls after browning instead of before allows you to skip two steps out of the freezer- I just drop the frozen balls into the sauce and in a few minutes it's ready, even easier than thawing and browing! Admittedly harder to use the fond though!

Both good ideas. I could still use the drippings from the sheet pan to add to the sauce. I've thought about freezing after searing the meatballs but wondered if they would hold up with texture. I will give it a try, it would eliminate a step for sure.
