1/4 REPOLYO FOR 6 PEOPLE- TORTANG REPOLYO
Prep time: 10 minutes
Cooking time: 20 minutes
Serves: 6 large tortas
1/4 wedge green cabbage
2 canned tuna
1 cup all purpose flour
salt and pepper
6 eggs beaten
cooking oil
2 cups water or chicken stock
1/4 cup low sodium soy sauce
1/2 tsp sugar
2 tbsp corstarch
1/2 cup water
Boil cabbage for 3 minutes until soft.
strain and cut into small pieces
Combine cabbage, tuna, flour and salt and pepper.
Add eggs
Combine well.
Pre heat oil for 2 minutes
Reduce heat to medium
Cook in batches - divide into 6 portions.
fry for 4 minutes turning once until crispy.
Set aside.
Make the sauce.
Bring stock to a boil.
Season with salt and pepper
Add soy and sugar.
Combine cornstarch and water.
Whisk into the boiling broth.
Keep whisking until thick.
Pour over tortas and serve.
Enjoy.
