I'm wondering why my character Seele (3150/75/195 + native cone), as well as the same supports. The maximum damage I could get was 140-160k with Seele's ultimate. What am I doing wrong? Or is this a fake video?

Have to look at different factors. Do you reach 160 speed to max seele cone's buff, do you have E1 ruan mei which gives defense ignore, her signature cone and bronya's signature cone to give a lot of dmg bonus, max trace investment for bronya, ruan mei and silver wolf for max def shred, crit damage and quantum damage bonus and attack? Did you run seele with three supports and ignore defense and healing? Also this is in MoC where the enemies get debuffed by the game this cycle. If you look at the end of each turn you see a wave of debuffs hit them such as def shred which makes you hit harder. Many factors come into play Outside of just your seele's stats.

There's no such thing as a "manipulation trick" for relics. Good stats are just a function of amount of stamina spent. If you see someone with good stats, it generally just means they spent a lot of stamina for them (over time)

Yea thats def ruan mei making the difference. Also the MOC buff this time is kinda cracked too. thats a lot of defense down combined with SW and Ruan Mei and all her other buffs.

That seems fine, getting to 121.3 speed can be nice for hitting 5th stack of Sig LC if you're using it. Crit rate is pretty important for Seele so she can actually kill mobs. This is a showcase video with 3 supports so dmg is higher than usual lol
