This is the main difference why Cebu Lechon is better compared to the rest of the country, we do not use lemon grass in our Lechon. Because lemongrass has this distinct taste, that will alter the taste of the Lechon, especially on the ribs.

Needed to use lemon grass if the pig was not fresh or if it was slaughtered a while ago. Because it brings a bad smell, unlike those were freshly slaughtered and immediately roasted, big difference in taste, fresh meats tasted nice.

a few times i attended birthdays almost everyday and following a fiesta for 2 days... dude if you eat and smell letchon everyday , you get sick or you feel sick on eating it.. best way to eat lechon is either ones or twice a month more than that is not really good and wont taste good anymore.
