Daryl mentioned sours & ciders which reminds me of a project I have been meaning to do and will have to do now I've said it in public, viz., get some wild yeast into my perpetual yeast. I don't know where everyone else is but here in London there are two plum trees that are braving the cold and actually flowering. I'm going to put a jar containing 10g of sugar in 100g of water with a tiny bit of my perpetual starter and see if I get some plum blossom ... or something else that is wild and good. I suppose it might seem a bit odd if you are further north and frozen solid but I think this might be a good time to catch natural yeasts. Or you could waste 10g of sugar and 10ml of your existing starter. I think Daryl will be brave, think of the sour plum fairy beer :) hey, maybe you have apples nearby, I have cherries and figs available too but they aren't doing early blossoming

The idea of using wild yeast to ferment your perpetual starter with some plum blossom sounds fascinating. It's always exciting to experiment with new ingredients and see what unique flavors and aromas they can bring to the table. I hope your project goes well and you end up with a delicious sour plum fairy beer or something equally delightful. And who knows, maybe others in colder climates could try this too and discover some surprising wild yeasts. Thanks for sharing your creative idea!

I’ve not yet tried any of those but would love to. I’ve sadly not been able to brew as much as I’d like to have this year hence the lack of videos. Hopefully I’ll be releasing more soon!

@@Kveiksmithdaryl Hey Man, great content indeed..! Can I offer that your audio processing might be a little over done. This is more evident when you are narrating the processing of the various beers, with previously recorded video - not so much when you're tasting and chatting. This is because you've got your audio compression up too high. This removes the dynamic range by making the audio all of a similar level. It's tiring on the ears, and is exactly why much of the modern music sounds nicer when it's turned off (aside from the shit music itself 😑). I'd try dialing the compression back by about 20-30 percent. Cheers 👍
