We used to make what we called "Luxury Muesli" for longer trips. What made it luxurious for us was dried peaches, and hazelnuts. (We'd add nutritional yeast for B vitamins.) In colder weather we'd substitute pecans for the hazelnuts to match the forecast overnight low temperatures. (Keep your pecans away from open flames!) If you have a food dehydrator, there are several excellent vegetable sources of calcium, collard greens, for example. Dry the greens, crumble them, add them to likely accompaniments: freeze-dried black eyed peas,, hot pepper flakes, maybe even a drop of liquid smoke?!? Also: if you know a brand of tofu that uses calcium sulfate (aka terra alba aka gypsum) as the coagulant, you could dry the tofu to add to your cold soak meal. Pro tip from a guy with decades of experience: green tea + lipids + proteins... skip the bulky, inessential carbohydrate.

Great cold soak suggestions - thx! My go-to ingredient is couscous, and then I add similair stuff from there. I agree that raisins do really liven it up 😀 even in savory meals.

I do some golden raisins and walnuts with couscous, let it soak a bit longer to let the raisins get nice and plump, so good :-)

Great video! I’m a vegan backpacker as well. Just started backpacking last year. I’ve experimented with ramen and couscous as my base and it was also great. Making a savory oatmeal for dinner is also something I enjoy. Add oats, mushroom bullion,salt, pepper, fried onions, TVP, and whatever spices you like and it’s delicious! Thanks for the ideas!

Canned sardines in olive oil. Nutrient rich. Or salmon pouches in extra virgin olive oil. Super nutritious and anti inflammatory.

For a 1-2 hiking trip or when bringing lunch for rock climbing I substitute the coconut milk powder with vegan vanilla protein powder. I found it easier to clean than the coconut. But really not as calories dense. I really like your channel by the way. I love your down to earth approach

I forgot to add my change to the description. This video is actually pretty old, made last January?? Soon after it I changed to desiccated coconut which is very very finely ground coconut because it does make the clean-up simple. I also often throw some protein powder into my meals...I go for chocolate though :)

3 years late but I would toast the oatmeal in a dry skillet beforehand, to give a bit more flavor. and for those who are diabetic I would suggest using oat bran instead. Less carbs and more fiber which means less likely to have a sugar spike majorly. and add more nuts and use dried blueberries and raspberries which have lower GI stats.

I love how at the beginning of the video you added the disclaimer about how you didn't want to scare off the non-vegans, and I was feeling thrilled to find it. Been plant based for about 20 years and just getting into the idea of no-cook systems. This is the first video I've come across that shows all vegan options. Hard cheese is a favorite of my thru hiking friends, so I did some research and found a youtube video today on 18 month aged hard vegan cheese and am considering making some and testing it out on a bike tour (in a year and a half when it's ready!) Anyhow, thanks for this detail. It's super helpful for a novice no-cooker.

Sounds all good. I would do smaller portions for me and substitute cranberries for the raisins (me not like raisins). Thanks for the ideas. I should be able to find most of the ingredients even in my rural area. I do take a small, DIY alcohol stove for my coffee or green tea, but I hate meal prep. Cold soaking is nice. You are giving me some great ideas for more variety.

This might sound silly, but when the raisins are soaked and they get plump, it just tastes like a little bite of sugar. I can't ever remember just eating raisins and for the first 40 years of my life :-) and then when I was trying to find something to replace sugar I experimented with them. I do love cranberries though, I have some recipes on this channel way back in which no raisins appear only cranberries!

Awesome video, Paul! I'm vegan but looking for more off-grid food ideas. TVP is what Hormel uses in their canned Vegetarian Chili. Bob's Red Mill TVP is pretty easy to find on my local WM shelf, and there's a mom and pop Asian grocery a few yards before their entrance drive. Haven't tried goji berries or soy curls yet, but I noticed Sweet Simple Vegan tried and recommends them highly, so I plan on ordering some. Instead of the brown gravy, I would substitute a curry blend, whatever is used by the vegan seafood producers for shrimp flavoring, and whatever else is used in Shah Jahan Biryani. That kind of heaven, savored offgrid in the cathedral of Nature could only lead to a sublime experience! Namaste'. 💖

I have most of those items. I will be starting my at home testing soon. I go for long walks / hikes to try an stay fit and healthy. I got one of those mini butane stoves and when I get to the furthest part of my hike I make and or have something to eat. I have been calling them noodle hikes or walks because that is what I have been making lately ramen noodles. I am gong to be doing some work with cornmeal also but you can't cold soak that (the regular corn meal). There was and maybe still is a famous tarp hiker whos main food was polenta or mush made from cornmeal.

The real issue is calorie density of your food. When you have a pasta meal, your pasta is 85 calories per ounce. Flour is 103 calories per ounce, so pastries/cookies aren't much better. Whether you cook or cold soak pasta to make it edible, pasta (and other flour based meals) are mostly carbs the rest is water and some seasoning. Pecans are 200 calories per ounce and mostly protein, fat, and low carbs (which is mostly fiber) which is much better for you than prepared meals. You get twice the calorie density by eating pecans or walnuts and they are ready to eat without cooking. Buy bags of shelled pecan halves or walnut halves at most grocery stores. I love rice & pasta meals, but for calorie density and conservation of pack weight, pecans or walnuts are the winner. You can survive on pecans or walnuts. The down side, is because of the high fiber content, you will need some extra toilet paper or butt wipes.

Add nutritional yeast to your recipes and you will bring up the vitamin B1 substantially while adding flavor at the same time. I hope you read this. Nutritional yeast really helps when you are tired as well.

Without going back and checking out this video, I'm pretty sure I was aiming at just the macronutrients with these ingredients and also trying to appeal to all Backpackers without scaring off anybody:-) this video was part of an experiment. A year before this video was published I published the exact same video with the title 10 ingredients every vegan pack Backpacker needs:-) you can probably guess which received more views! Nutritional yeast is a staple in our house and on trips. As a bonus, 4 grams of protein in every tablespoon :-)

All the nutrition is usually lost in almost all freeze dried vegetables. So I don't find they are worth the money. Or time! Maybe good for some fiber :)

Just soak 3 types of any below nuts in water for one night. Almonds, Cashew nuts, Pea nuts, Walnuts, Sun flower seeds, Watermelon seeds, Pumpkin seeds. They are ready to eat along with any Fruits. This is uncooked, unboiled Raw Natural Vegetarian protein food. Best for immunity boosting. If we cook any of the food, it's micro nutrients will be lost. This is best meal for backpackers. One of the more common questions! I never measure and just eyeball it. In the winter everything tends to be thicker, and the summer everything's a bit more soupy to get more water and me. I'm really not careful with the measuring. If I go to eat it and it's too thick I'll just add more water and if it's too soupy that usually doesn't matter!

How much water do you add?

Because I never really measure my dry ingredients, the amount of water will change a little bit every time. Normally I fill to cover the dry ingredients and then add a little bit more. So easy to just add a little bit more water if needed, and in the summer I will normally add more water and make it quite sub just to get a little extra hydration.

Here's a tip for the meat eaters out there. Recently started cold soaking myself, and although all the meals I was making were very tasty, I never ended up feeling full afterwards. The result of this was that I made way too large portions. Upwards of 300 grams pr. meal. When shopping ingredients for my last trip, I stumbled over some mini salamis on sale. Took a handful of them with me on trail and ate them as a side for my couscous. It completely solved my problem.

My earlier videos I used to always weigh each meal, I stopped doing it :-) but my goal is always close to 4,000 calories and under 2 pounds. Being under 2 pounds is easy, the calories is obviously all dependent on what type of food I bring.

An often asked question that I never have an answer to! I never really measure I just kind of pour some in and just know what level it should be. In the cold I usually do less and in the summer I do more for a more watery meal. I think there's no perfect amount, you just try it at home with less than you think is necessary, and then you can just keep adding more until you get it right. And then once you go out you'll know exactly what works for you. I know, Not a great answer!
