I am experimenting more with bringing international dishes into my cooking. I already love all of the spices, the chilies, and the oils, so I think that this is something I would love to try. My Indonesian stepmother used to cook a smelt with spices and serve (with rice) something similar to this, but she would also serve smelt deep fried. Either way, I know she soaked it in milk for a while before cooking. She just said it was to help clean the fish. It was a very good dish!

The video is so amazingly made. Reminds me of my childhood when the aunties in my village catch goby fishes thru fishing nets. They normally cook it with tomato and onion and a little bit of water. Soaking the fishes in milk is foreign to me. Not sure if it will clean the fish or it will make the dish taste better. But, I am so amazed from the way it was prepared, eaten and served. They soak the fish in milk to clean the inner part of fish.. The fish will intake the milk and let out the unwanted matter inside the fish..This is done for small fishes where you cannot clean inside the fish..

Salt (given its anti-bacterial trait) is used for cleaning the outside of the fish. Milk is used for cleaning the internals of such small fish. The thought is that the fish will ingest the milk while gasping for life and expel any impurities they may still have in them.
