It might not be your fault though, the whole steering system in this game is fucked. This guy play on PC, I think the Unity mod can make it better, maybe he use that, this is why he's so good. Or he actually found a solution.

Honestly the drifting isn’t that hard. It’s the exit the hard one. The car keeps twitching a lot in the exit.
