The novel is no longer canon now that they’re creating an animated adaptation of her story by the original creators. It’s a reboot so it’ll most likely keep that plot point the same but until it’s release Kyoshis parents lineage is no longer canon

For Aang, all Air Nomands are born with the ability to airbend (due to their strong spiritual connection), so his parents were, by nature, benders. For Piandao, a quick google search has shown me that this quote was in an "Avatar Encyclopedia", which now no longer exists: "Piandao was born to two Firebenders. Ashamed that their only son wasn’t a bender, his parents left him on the doorsteps of an orphanage"

There’s probably more but these are the only 2 characters that have verified parents who are both non benders. All Airbender are benders so aangs parents are benders and piando has 2 firenation parents as explained by the creators when asked in an interview

In a side comic it was revealed that both of Piando’s parents where firebender and upon discovery of his lack of bending they gave him up for adoption. For Aang it’s assumed his parents are both benders as all air nomads are benders due to their spiritual connection.
