Back then, I automatically think of kimchi when I associate food to Korea because that was the most representative dish hyped in my country. Then kpop and kdrama took over the world and now we have a lot of Korean restaurants where I live. Their food is simply amazing!
I prefer to eat kimchi fresh. If it becomes sour due to aging, I cook that kimchi instead. Kimchi that can not taste aged, but has aged greatly blew my mind.
