Any kind you like. I don't think variety matters a whole lot. I like black magic the best personally but siberian, red Russian and winter bor are great too. Siberian is supposed to be the toughest but I've not seen significant difference in variety. I think cold toughness depends on size if the plant. And many other factors.

I'm in a similar growing situation. I have found that curly leaf varieties are the most cold hardy. That includes spinach, savoy spinach is extremely cold hardy. I've grown it outside and it survived the winter by growing down low to the ground. The curlier the leaf the better.

Basically nothing. If the plants are healthy they're a lot less likely to get aphids. We did get some on this Kale but the plants resisted.
