Explanation for the first one: By combining baking soda and vinegar a reaction is caused that produces carbon dioxide, a gas with a density higher than air. This means it is heavier than air. Therefore it just sits in the glass above the mixture. Fire needs oxygen in order to burn so by pouring carbon dioxide over the flame it extinguishes it. You can actually pour the carbon dioxide into another jar then pour that over the candle and it will still go out. It's a fun and quick experiment that is easy to do if you feel like it. The smoke is a nice visual, but not necessary for the experiment to work. Still very fun to watch all the same.

I'm only 4 months late. Egg shells(the hard outside shell) are made of calcium. Since vinegar is an acid that basically dissolves the outer shell and leaves only the inner shell.
