13 RV Thanksgiving Time, Space, and Money-Saving tips! AND Creamy Mashed Potatoes in the Instant Pot

We use freezer bags or containers to package up turkey and stuffing bags that have just enough to make two sandwiches (we are empty nesters) and then freeze them. When we feel for a turkey sandwich weeks later, it’s a simple matter of thawing it out and mixing with some mayo and seasonings. When we were first married (40 yrs ago this August 11), hubby thought I was insane to put stuffing in my chicken nor turkey sandwiches; now he loves it! I also dice up and freeze packs of turkey with just enough for a turkey divan or other casseroles. I freeze the bag laid flat on cookie sheets (I do this with all the pks I freeze now) so I can store them standing up inside a plastic bin. I have a bin each for meats, veggies, fruits, and soups. Because they are contained, I never lose them in the freezer and can find anything I am looking for.

I love that! My husband would love a turkey sandwich with stuffing, I’ll have to try that.

My daughter is doing most of the cooking nowadays. All I'm bringing is the cranberry sauce we've been making for years and a harvest salad with apple cider dressing. My "have to haves" are the family recipe of homemade dressing, mashed potatoes, and the cranberries. We also buy sourdough bread for the next day's sandwiches.
