I have been making 15 minute mash and 15 minute boil beers for over a year now. Other than a small, hit in efficiency, all have been very tasty.

I do a cascade smash with vienna malt quite often. Steve is right, the more exposure to more complex beers I get the simpler my tastes become. :)

Finally got around to trying a 15 minute boil and it worked great! Briess Light Pils DME, 8g Tett hops, 8g Hall hops. 4g of each hop at the beginning of the boil, 4g of each at flameout. One of the best "pilsners" I've ever made. The twist was using US-05 :)

I totally get what you're saying Steve. Almost like a craft brew with decent abv but with more of a sessionable taste. I get that way too sometimes. Some IPA's & Dbl IPA's can get overbearing quickly. Often when I'm about halfway through a glass I'm thinking about changing to something else a little milder. Nothing wrong with that. It's all about the enjoyment.

I just tried my version of this with Maris Otter and Simcoe. (Moe Simcoe is what I call it.) It came out real good. Like Steve said, there's a nice softness to it. I only wish now I made more than a six pack.

Is there any reason you don’t consider doing a first wort hop with these shorter boil beers? I’d figure maybe you’d get more bitterness out of your hops that way.

Rewatching to see if they detected DMS notes. Because I'm brewing a Kveik IPA tomorrow and was thinking about cutting down the mashing and boiling time to 15 minutes each. Apparently it's a good idea.

I might do a 3 gallon BIAB version of this. I got a three gallon keg for my meads, but when I run out of ready to keg mead, I brew up a quick 3 gallon beer for it so I don’t have empty taps. Always want to try something different.

This one went a week before packaging. Your mileage may vary. Check gravity with a hydrometer to make sure fermentation is complete. - James

I'm 24 hours into our decision to home brew and I just figured out a short while ago that the hydrometer is what determines that you're done fermenting (just purchased one) before heading down the conditioning route. A lot of learning and trial and error ahead - my first attempt will be a simple Czech style lager.

I just brewed a 2.5 gallon batch yesterday. Did you ferment for 2 weeks or less? I normally go for 2 weeks if the conditions are optimal for the US 05 yeast. I live in a studio apartment and can't control the temperature if it gets too warm. I have pull beers out of fermentation in 9 days with no problem. What's your take? Love your site. Have made a lot of your recipes. Thanks.

Glad you like our stuff! It looks like I brewed on 11/26/17 and bottled on 12/3/17. With this beer, I didn't see any benefit in keeping it in the fermenter after it reached final gravity. Cheers! - James

There's a lot more to NEIPA's aside from the haze; that's just a byproduct. You'd have to pay more attention to the water profile and yeast contributions. My two cents, from someone living in New England.

Nice video, big fan of short boil and no boil at all as well. Though not sure why you are saying this could be a neipa as you said yourself the hop character is low. As well haziness is a byproduct of the amount of hop during whirlpool and dry hop. Now it's up to you to try a smash "neipaish" going no boil huge whirlpool dry hop n°1 when pitching yeast dry hop a couple of day later! That would be fun! :)

2 Row isn't as susceptible to DMS as say pilsner. Also a nice vigorous boil and it should evaporate nicely.

I see you guys using aluminum stock pot I’m just getting in to all grain and the stainless pots are expensive does the aluminum change or cause any taste since most people I watch have stainless Steel pots thanks

You could certainly try it. You'd have to add a whole bunch of hops to achieve the desired bitterness level, but maybe that's not a bad thing. - James

I love my system very much. I just used it a few days ago to do a scaled up version similar to this beer. My High Gravity kettle is too big for small batch experiments, though. You'll love yours, too! - James

Sad that so many people just want to tell you what they know, rather than ask what you know. Flat earthers, I call them. I'm trying this right now as a 20L batch and will let you know how it turns out. You didn't mention sparging at all but I did a 5L sparge anyway as it seemed a shame not to.

I have done some years ago a 15min boil with lots of hops... Good beer but drink it fast! As the hop aroma drops out storage flavors will come in... lack of bitterness without hop flavor it's just terrible... Left one bottle for at least 6 month and you'll see...

Listening to you Palmer podcast on NEIPA and it came off like old guys talking about Rap music. I've NEVER heard anyone call these "Knee-puh" just as I've never heard "eye-puh". Love your content otherwise, just see too much ignorance around the style by old school brewers.
