I wasn't allowed to use flair behind the bar, until my manager found out we had ~12% more profits on the shifts I was on, because I did flair anyways. Then he encouraged me to keep on doing it.

I dislike flair when it involves spillage, I don't care if you end up spilling a ounce out of a bottle. I don't like the mess on the table. I also hate when it's elaborate and time consuming. If it takes a minute to make a drink and it takes a minute twenty to do your flair awesome. But some people take 5 minutes to make a one minute drink.

Automatic fingerspins can be kind of useful. If I hold a pencil wrong I make a fingerspin to writing position even though I can underline a word in the wrong position

I used to take short tumblers out of the rack and flick or spin them upright for the catch behind the back while grabbing my first bottle. Hard to free pour these days with liquor laws.

It starts the chilling process of the drink. The shakers are colling down and so is the liquid you're pouring into the small shaker, which is sitting on ice.

I feel dumb asking this...but why in the tin on tin moves were you putting the small tin into the large one upside down (or right side up depending on perspective)? How would you be sealing the shaker that way? I feel like I'm confused as to what point in the shaking process this is happening...

It's to prepare the cocktail in the shaker which us sitting on ice and cooling down. When ready, turn it over, seal and shake as normal

Edit… I subscribed and liked, this guy obviously is a very good teacher, and knowledgeable mixologist. I’m a very VERY new bartender/supervisor… The thumb roll thing was always second nature to me, even as a host grabbing a refill… It actually really helps to start with pint glasses because they’re heavier, and you learn to do it every time you pick up a glass out of the glass rack.

As long as your pours are precise, I have nothing against flair. If your drinks are inconsistent because the tricks are causing fluctuations in your pours, then you can fuck right off from behind my bar. You’re not welcome. Standardization first, then speed, then style. No style without speed, no speed without consistency. I’m firmly in the Dave Arnold camp of bartending.

No disrespect, but I've never been to a bar where this wouldn't be extremely unwanted. It'd be just as unwelcome at divey industry bars or nice cocktail bars. Where is this kind of thing appropriate? Maybe at a frat party or a resort or something? Perhaps it's an australian thing? I'm not trying to be rude, I just genuinely don't get it.

There are several bars across the world that allow / have flair bartending. Look at TGI Fridays. IT is part of their training to become a higher paid bartender. Also, many bartenders are incorporating flair bartending into their skills as it is enjoyable for them. don't get me wrong, there are plenty of bartenders out there that use it incorrectly, but a good flair bartender is great to see in action. IT's all about time and place.
