Im pretty sure they touched on the Apple logo in Steve Jobs documentary where he just jokeingly said to name the company Apple because he wanted a simple easy to remember and recognize name like "apple" and it just remained apple from then on out. Theres no science to it, it was just a "Make me a company logo/name, something easy to remember... like "apple", but not actually apple" and it just became apple.
