I remember the outside acid coating being very fine- like a powder. I don’t recall there being any full crystals of sour. Maybe consider blitzing the acid in a blender before applying? I am just one opinion though!
@bigjedimullet3 жыл бұрын
I also remember the acid coating being quite fine-it felt very fancy to me, like a snazzier, more sour version of the powdered sugar coating on the French fruit pastille candies that also came in flat tins like the Sours. Not a ton of powder in the bottom of the tin, though, and when you’d get little broken chunks of candy at the bottom they would be sour rather than sweet, since the sour part wasn’t all in the coating. I also say blend it down and see what happens!
@BBayjay3 жыл бұрын
VERY FINE, Like powdered sugar fine!
@DarkusZarvix3 жыл бұрын
I remember the coating being very fine too, more of a powder. The overall coating was like a thin layer of powdered sugar rather than crystals stuck to the wax. Maybe the Malic acid will be a finer powder than the Citric acid?
@Sometimes_Always3 жыл бұрын
Yea.. The smaller particle size might result in a stronger "sour" kick that also goes away faster.. More surface area for absorption/chemical reaction. Great idea!

I remember wetting my finger to get all the sour powder out of the can, and yes it was definitely a super fine powder. The coating shown here looks more like the coating you find on sour gummies.

there was always a lot of white powder on the candies and just in a pile in the tin, there was also a piece of paper /waxed paper in the tin that the candies would sit in as well
@MsChrissykinz3 жыл бұрын
seconded! I remember the excess of powder and the wax paper on the bottom as well.
@stgigamovement3 жыл бұрын
The white powder actually made the originals look like peeled tangerines due to it being done in a somewhat radial way. Root beer barrel candy is formed in a radial way too. The raspberry roller comes close due to how real tangerines are not uniform physically and almost have a grid of sorts similar to the crevices I saw on the roller. So if one can get the powder in some of the crevices on the candy it would be more accurate.

Glad to see the breakthrough in the sour coating. I remember the candy had an almost frosted white coating lightly tinting the color of the core. I think Warheads were similar actually, though back then they were much stronger than Altoids.. It would be great if you could find a smaller roller, as the size of the candy back then allowed me to eat many more than I would've normally, just to experience the strong sour coating more often. I feel like they were only a bit bigger than a chocolate chip. So maybe between 10 and 12mm. They also sat on a thin piece of wax paper.

I have a very vivid memory of these candies. There wasn't that much powder on them at all. That being said, it was just because the powder was so fine. The initial sour only lasted a few moments before it was mellowed out by the sweetness of the candy. The candy itself was slightly chewy, and still had the sour tang that you'd expect when eating a real tangerine. I also remember each one being about dime-sized. Hope this helps!

Thank god I found this video! I loved Tangerine Sours! I used to buy a can once a week from a little shop near the office I worked at. One day, I noticed they were out of stock for awhile so I went online and bought an 8-pk from Amazon. Two days later I discovered from the shop owner that those Altoids were recently discontinued. I immediately went back to Amazon to order more but unfortunately, they were sold out everywhere. I had just eight tins that I slowly doled out to myself...one sour at a time. Eventually, I opened the eighth (and final) can. I slowly rationed off those last sours at a miniscule rate. There was that inevitable dread as I got down to the last sour in that last can. I couldn't bring myself to eat it so I left it in the can. I kept that tin can for years until I accidentally lost it when I moved. If your attempt at making Tangerine Sours are successful at capturing that taste...I'll be buying a shitload of those candies from you. Keep me in the loop please!!!

It's getting closer, but I thoroughly remember there being a cloudy covering on the candy. Malic acid crystals are generally granular, but it wasn't like that on the originals, it was more like a super thin white powder. I'm not sure if they pulverized the acid using pulverizers or vita-mixers, but while it's going through the tumbler, you could powder coat them while spinning. Usually automotive places have powder coating tools if you want to talk to someone there.

The second batch Stephanie seems like the perfect kind of candy for me. I absolutely love sour candy, but usually most sour candy like gummy worms or hard candy don't exactly cut it. Warheads and the candy "Toxic Waste" both are very sour but they don't quite cut it either, since the sour is mostly just the outside of the candy, and they're also all individually wrapped so it's difficult to get at them. If you ever sell a citrus flavored candy with the persistent sourness of that second batch I may have to consider getting some

Like people have said, the sour coating was pretty fine, and my guess is that either the acid was dissolved in something sweet, dehydrated, and crushed into a powder, or the candies were dipped in the acid solution first and then dehydrated. Think of those warheads or toxic waste candies where they are super sour, but don't have any crystalline textures on the coating. I would look into how the coating on those is made, and just tone it down a bit.
