Why do you want to make the engine side mount removable? Build the engine side mount, bolt it to the block, than bolt the mount to the original Mercedes engine mount and call it done. Most likely you'll never need to remove it again.

I would not be able to take the mount of to finish weld it or paint it.

The bolt won't go in or out of that top hole at all.
