what do you mean by taking energy away and adding energy here? wouldn't you have to increase the temperature to increase the energy and vice versa?

yea that or changing P, V referring to work done by or on the system. You can also accredit the change in phase to the combined effect of change in PV. Now she uses the word energy which is work which could be PV or temperature. If one would change all are subject to change. Energy also refers to enthalpy and heat and entropy, all different parameters of explaining change from a perspective.

its called the dryness fraction too,can be found using mollier's chart or steam tables based on data given
