2 or 3 Ingredient Macaroni Meals From The Pantry, Plus 1 Ingredient Bread!

These are all dishes that my grandparents or my mother made when we were growing up. They use simple things that are always on hand, and can be made from shelf-stable foods kept in the pantry.
Fried Cornbread:
1/2 cup cornmeal
1/2 teaspoon salt
1/4 cup boiling water.
Mix well. Shape into patties and fry in hot fat until brown on one side. Turn, and fry on the other side. Serve warm or cold.
Macaroni and Milk:
1 cup Evaporated Milk
1 cup Water
(or 1 1/2 cups regular milk and 1/2 cup water)
1/2 cup Macaroni, elbows or shells
1/2 teaspoon salt.
Makes about 2 cups. Double the recipe to make enough for 2 people.
To make enough for a family, use:
6 cups of Milk
2 cups of Water
2 cups Macaroni
2 teaspoons Salt
Add Macaroni when milk is hot but not boiling. Cook very slowly over low heat, simmering but not boiling, until the macaroni absorbs most of the liquid Stir often. Cooking will take from 30 minutes to an hour, depending on the size of the batch you are making.

Yummy comfort food I grew up eating. We did our fried cornbread using very fine stone ground white cornmeal that we bought in deep southeastern Alabama where my father was from - would would bring back to Texas 100 pounds when we visited - family members always put in their order with anyone going to visit. My dad felt like he would run short if there wasn’t at least 50 pounds in the freezer. We also used that meal for hush puppies. Stay well and safe my friend!

Oh my... I love stone ground cornmeal!!! I completely understand why your dad wanted to bring so much home to always have it! It is nothing like the regular ground that we buy today. I remember when my grandparents first took us to Silver Dollar City MO in the 1960s and could buy stone ground meal there - they bought many pounds to carry home. They took us on vacation there several times after that. I hope you and yours are able to stay in and away from the germs right now. God keep you! :-) Tina

Thank you. I am allergic to processed cheese. But, I would buy a blue box of mac and cheese; make macaroni and tomatoes and then sprinkle the cheese on popcorn. Merry Christmas

I made Mac and cheese that way last night, and it’s my favorite way to make it. I made a big pot of Italian gravy (sauce) a couple weeks ago, made penne pasta bake with some, and had some lasagna noodles on shelf, so that’s lunch tomorrow. I keep powdered whole milk on pantry shelf, too (WalMart)

I never heard of milk and macaroni, new one on me. Bet that would be good with some parmesan. It all looks great. You and Paul take care.

Believe it or not, it is surprisingly good without anything added. It would be great with parmesan, but do taste without it first. One of those old time dishes that people made before we had so much variety available to us! I hope you are weathering the StayHome well. I bet that, like me, you never run out of things to do! Stretching back my memory to 1958 childhood, I remember my Mamaw making cornbread cooked a certain way, in an iron skillet, & she called it " Johnny Cake"?? Can you explain, & make that ? Thank you for making Hot Water Cornbread. Did you fry it on Medium, or Low Heat. ? Mom made tomatoes, seasoned it vinegar&sugar,salt&pepper, then Added 2 slices of torn up Sunbeam Bread. Simmered very low. Do you know that recipe, ? I'd love to see how to make it. Love macaroni&Maters ! 😃📒✏🏡🌾☘ Makes the best supper ever ! Great vide0.

Both of those dishes sound so good. I remember Paul talking about his mother making tomatoes with bread as you describe... I always intended to make it and have not yet. Thanks for asking about it, I will ask Paul how she did it, so I can make it and film it. We grew up with Wonder bread & Mrs Bairds, but now I think Sunbeam bread is the best! :-) Tina

In the summer time, I do, because it will mold with the heat (bread also I refrigerate in summer). But during the cooler months, it keeps fine on the counter in our house. We do not have central heat or air, so it is slightly cooler in that spot on the tiles during the winter. :-) Tina
