Hi, i am going through a similar procedure. Why do you only disconnect the negative terminal of the battery and not both?

By disconnecting only one terminal on the battery you have broken the electrical circuit of the car. Just like how a home wall switch cuts the power to the outlet it is connected to. It doesn't matter if the positive or negative terminal is disconnected since either will cut power to the car and its systems. The battery must have both terminals connected in order for current to flow, of course. The ground terminal was selected most likely because it is easiest to get at. Hope this clarifies. 🙂

Bro I'm mad struggling trying to get mine off. Plus when I go in accessories mode it still won't unlock the steering wheel.

You don't have to disconnect the battery when pulling the airbag. The car can even be running when pulling the airbag or removing and installing the connectors.

While it's true you can remove the airbag while the battery is connected or even when the car's running, for safety reasons it is often recommended to disconnect the battery.
