Kudos to the low sodium! After my hubby's heart attack I had to figure out how to get satisfying flavor with way less salt. It took me some figuring and testing, but now, 1 and a half years after the heart attack, I have re-created all his favorites and added some new things. I just recently made jalepeno poppers for the first time. He loved them. Wouldn't mind getting a jalepeno popper video from you. Your videos are very inspiring to me. And I promise you that's saying something because I am not a cooking video type of person until I stumbled across your videos.

I made this soup last night, it was absolutely amazing! I didn't have fresh thyme or bay leaves so I used fresh coriander and lime leaves instead and it worked brilliantly. Oh and I added a fresh jalapeno too, it was great. This will now become a regular for me, I loved it that much! Thanks so much Derek. :)

I think you are my favorite chef to watch. The process is usually simple and I can get how to re-create the dish. This one is going to be a try in the next week. I need easy and whole-food healthy. November is 10 years trying the whole-food plant-based life style. I get into the vegan processed foods, but then slap myself and get back into a healthier whole food vibe. Thank you for being here!

I like making orange soup which is made from whatever I have on hand that is somewhere on the orange color scale (in between red, yellow and white). Onions, carrots, sweet potatoes, red lentils, panang curry paste, etc. I never thought of making green soup! Definitely trying this one :) Edit: I made it! It's quite nice. It's mild, and doesn't taste as green as it looks :D A very palatable way to eat a significant amount of veggies at once. And it's satiating. My stomach didn't get hungry for many many hours after eating it but after a while my brain was going "I'm not getting the signals for it but we need more calories, no?". Then I put the recipe in cronometer to see what the nutrition of this is like and wow! It kicks ass and has the absolute most amount of potassium per calorie I have ever seen. One tip to give it an even bigger health boost: garnish it with mustard powder after it's been cooked. Just a little bit. The broccoli and kale have some enzyme reaction that produces a super healthy compound when chopped up and left for 45 min. Cooking destroys that enzyme, but since mustard is also of the brassica family it also has that enzyme, so it can produce the healthy compound while you chew and digest the food. (google Michael Greger "Second Strategy to Cooking Broccoli" for the detailed explanation)

This soup was absolutely amazing. We have kind of a split house. I have to eat differently than everyone else due to a therapy that I'm on where I cannot have salt or fat. This tasted great with and without salt/fat (according to my husband and 3 sons). They all said they could've eaten the soup that I had with no problem. So grateful that you have videos that include both the loaded and salt/oil/sugar free versions. I haven't been able to eat for 3 weeks due to heavy detoxing and this was a very welcome reset. Thank you for your generosity.

Yum! I love green soups. I already make something similar but I use roasted tofu as my croutons and an added protein hit to the soup. I add a spoonful of cornflour (corn starch), some onion and garlic powder, some celery seeds if I have them handy, and a little smoked paprika, sprinkle it over the tofu pieces and mix gently so the tofu is completely covered. Put on a parchment lined baking sheet and bake for 15-20 mins at 220*c fan assisted or until crispy on the outside. I usually make these the day before my soup so they are cold and crunchier. I am trying to get to be nearly salt free, but I am a saltaholic and really struggle. If there is no salt then I need lots of herbs and spices or lemon juice to help lift and enhance the flavors of the food. I get home to the US once a year to visit family and stock up on salt substitute herbal seasoning mixes. Wish they sold more of those here in the UK. I never thought to do roasted potatoes to use as croutons though, thanks for the heads up. I might try them also with roasted sweet potato or a mix of sweet and regular spuds. ❤

Just made this, so goooood. Used soy milk as all that was in the pantry 😊 Tasted so creamy and healthy. Better than bread croutons. My meat eating partner, frightened when saw Kale go in, loved it!!! Thanks for all your tasty recipes, and Encouragement to go plant based. ❤

I love this soup; when I lived in Lausanne it seemed every spring everyone was beginning their meals with cabbage soup as a kind of metaphorical detox. This is vastly superior. My only quibble for the no oil salt sugar rule is that some nutrients are fat soluble so if you can add something naturally containing fat (nut butters, olives or a modicum of sesame or olive or etc. oil as a finishing touch the Betacarotine/vit E/D/K will be better absorbed. Sodium/sugar no problem my end; caramelize an onion or roast a root veg and with the right seasoning good to go. I do make my own vegan broth when making soup from scraps etc. using a mandolin and mixing with dried porcini mushrooms and a bit of kombu a bit of miso which does contain sodium naturally and it blows bone broth out of the water; once roasted just reduce by half good to go. I know I'm never going to be a proper chef but life-long foodie so forgive the presumption. Tx so much for this remarkable channel.

Hi Derek, thank you for this delish green soup recipe. I enjoy texture and crunch in all my dishes. I roast potatoes with spices, whenever I make stews or curries and serve them on the side or on top, rather than cook them in the dish. I was soooo excited when you roasted the potatoes to serve with the soup. Guess what I'll be cooking tomorrow. So enjoyed seeing Frankie wading thought that lovely crystal clear water, looks like such a serene space with all the greenery. Spitting out the blackberry, priceless. Oh lovely, haven’t made green soup for ages. I’m inspired. One tip I like to do - add cashews to the blender for cream, they have a very mild flavour but souper(hehe) creamy

Thanks for the recipe. A few years ago I'd never imagine myself enjoying such a green and healthy meal. However, a clumsy cook that I am, I've evidently messed something up and the soup didn't turn out creamy at all - it was still tasty and rich in flavour, but it ended up being on the thin side. I'm wondering what could've gone wrong. Ingredients and quantities were the same, maybe the broccoli head was a bit smaller, but not by much. I've used home-made oat milk -- I'm thinking maybe it needed something more creamy, like coconut milk or a soy cooking cream? I might've sauted the veggies a bit long, since I'm not that quick and swift around the kitchen, but I imagine that would've affected taste more than consistency alone. Plus I was using a stick blender, but I'm sure I was throrough with my blending. Next time (and there surely will be next time) I'm going to add like half the broth and see what happens.

This looks really good! Could even add some green chiles for heat Heads up, a lot of store bought plant milks contain a large amount of canola oil and use sketchy stabilizers to keep it suspended. Check out the ingredients on those boxes next time you go to buy one. When it comes to store bought, canned coconut milk is usually one of the cleanest plant milks
