I feel like, for the Deacons, they all died because when the head honcho gets killed, it could be set to kill all remaining enemies in the room, not just the Deacons themselves. So when the main Deacon died, all the Gaels died too. This is just a guess, but I feel like it's a pretty good guess.

For the deacons fight, the health bar is connected to a single entity within the central structure. Attacks which strike through surfaces are able to deal damage to it and essentially kill the boss without needing to go through the stages. Zulie the Witch showed this on one of their videos, I believe.

1:41 my guess is that the main deacon is stored in the big square in the middle of the arena and that the gaels hit it through that wall and killed him. As to why all of them died I would guess that there is a kill switch for all bosses inside the arena for when the main deacon dies but it is weird that it affected the gaels as well, maybe it is due to killing the boss earlier than intended.
