So often I need to pause and rewind when following along. Seeing you work in real-time is super helpful in the kitchen. Watching a chef multi-task, prioritize, and work a hot pan in real time shows you how to manage heat, and how long you should realistically expect for things to take. For these quicker recipes, this is super helpful. Great vid!

My favorite thing about your channel is that the videos tend to be 8-12 minutes long. You've got a great knack for getting the editing and scripting exactly right to fit maximum info into minimum time. FWIW! Thanks for many many many great meals since I started watching.

Agreed! The edited videos basically convey the exact same steps but they're a lot easier to just watch in one go. These types of "cook as you go" videos are very useful for beginner cooks though. Seeing everything done step by step without time cuts would be super helpful if you're not very comfortable in the kitchen yet.

Agreed. I don’t need to see everything play out in real time, and a 10 minute video shows me a lot. But this is a great format to work into rotation.

I felt that whenever he said commenters are like, “It’s an hour,” because the chicken parm was supposed to take approximately half an hour and it took me over 2 hours to finish it. HOWEVER! That chicken parm sauce is a STAPLE in my kitchen now. My brother begs me to make it at least once a week.

Same on the chicken parm haha. Took me at least two hours when I only planned for an hour. I thought doubling his estimate would be enough for me but not even close haha

the chicken parm recipe is now a standard in my house. we big batch cook the sauce and freeze it in dinner portions but the first few times it was definitely not a quick weeknight meal.

I like the live format! I like the live feedback from Lorn, who represents us by asking questions and making sure we understand all the little steps along the way. I'd be happy to see some more presentations in this style.

I enjoyed this longer minute by minute episode. It really shows why professional cooks can get things like this done in the time frame suggested and home cooks struggle with it. I often find myself underestimating how long it will take me to make things because I never make sure my items are prepped and ready to go, and struggle with heat control and timing in my cooking. I loved this format, but think also your regular formats are great too, so I'd personally love to see a mix of the two. Also, something I think would be really cool is if you were to, say at the very end or beginning of the video, post the list of ingredients on the screen. I know they're in the comments, but when I'm using my phone to watch the video while I make it, sometimes its helpful to not have to have the comments section open.

In some bizarre set of coincidences I literally have everything I need to make this tonight so I will be doing so! Absolutely love this format. Also loved the collabs with you and Ethan, my other favorite PHC. You guys rock. Keep up the good work. Update: 30 mins including washing the rice, pouring the dring and taking pics, yet excluding mushrooms. Yummy. Ah and broccolini instead of bok choć as I couldn't get baby ones in my city :(

Just an fyi, the owner of a local Asian market told me storing the peeled garlic in the freezer will preserve it from growing mold. Also frozen fingers of ginger is a great hack. It'll last for 6mos to a year if stored in the freezer relatively air tight.

Like the format very much! I am one of those people that watches a cook here on YT and they so sweetly say "This is my favorite recipe cause it only takes twenty minutes to prepare..." then I give it a try and I'm sitting down at the table an hour and a half after starting. Brian, remember the key to a great video... The more Lorn, the better the video is.

Really enjoyed this! My husband (who's the cook in the family, Im the baker) watches a ton of Asian cooking YT channels. What you made has some authentic techniques, but more accessible. Also, peeled garlic is the sh*t and anyone who tries to shame you for it is wrong.

As a home cook, I am always attempting to “weeknight” more efficiently without all the know-how of a professional chef. Especially for your weeknighting series I appreciate this style video so much. Also Lorn tossing out some questions to throw you off-guard added extra flare of realism. For your other informational videos with techniques and recipes, I prefer your usual style. Loved it and also enjoyed seeing Lorn in the video!

Possibly my favorite video from Brian. Truth is I’ve cooked like this dozens of times: quick high-heat chicken and veg stirfry during my lunch break. Obviously my sauce was never as good as this, but you can get real close with even just a Lodge cast iron or carbon steel pan on the hottest burner

I can see how these videos would be helpful for absolute beginners to maybe boost confidence, but personally I much prefer your typical video style. They're so well put together and pleasant to watch and TO ME still convey everything needed. This was a super simple meal that didn't need 25 mins, IMO.

I love how Brian is literally laughing as he sets the timer, as he should. Everyone has different skill levels within cooking guys. A few times of doing the weeknighting recipes and you’ll be flying through. No sense in complaining about a dude’s videos who puts out great content literally every time he drops a video. Keep up the great work Brian.

I love this format for those weeknight recipes! This would still likely take me closer to 45 min but that is only because my chopping and organization skills in the kitchen are not as efficient as yours, so whenever I see an under 30 min recipe, I know it is going to take me a bit longer but that's ok. With that said, I really enjoyed seeing this in real time. Seeing your process in order to get it done in such a short time can definitely help me improve my skills

I like Lauren! She’s dope 💯 I like your normal style, but this was good too. I liked that there were more comments to be heard that maybe aren’t crucial, but are comforting to hear for less experienced cooks. Just the thoughts that are moving through your head as you work that are also potentially going through our heads that we may not know the answers to, but you answer them as you go.

Dude. You're just killing it with the quality. I've learnt a lot from youtube videos over the last 10 years, but your channel is by far the best at teaching general cooking with techniques, flavor pairings, idealogies, contrasts and all that. I'd say what it's missing, which I'm not missing at all, is plating. Cause I hate plating ;). // Random swedish dude.

Huge, huge, huge fan of this format. I get way fancier than I need to with most of my cooking and it always turns into 30+ min ordeals, but more _actual_ 15-20min recipes in this format would be amazing. I wouldn't even mind fast-forwarding (not cutting) through hurry-up-and-wait segments. Hoping for more of these here and there!

I like the format of this video. The "live" aspect is great, showing off the spontaneity & "improv" you bring to cooking. Plus, I enjoy seeing Lorn's participation in the videos as well. These style of videos are a great change of pace!

really like this format, it´s a bit more "honest" (i know big word) than the usual heavily edited footage you normally see on cooking channels. this really grew up from the "weeds and sardines" days and still somehow feels the same (in a good way). I like this style of video, I think it lends itself well to the whole Weeknighting approach & experience. If I had a note to share it would be that Brian's chatter gets a little TV cheffy in these real-time videos compared with the usual voice over, but not offensively so.

Loved this video! I love digging into crazy complex cooking videos on weekends but these type of down-to-earth weeknight videos are the majority of our meals. These kind of videos are really inspiring to my tired, burnt-out self on random Thursdays when I dont know what to cook. They help me get off the couch (when I am insistent that yes, cheese crackers ARE a perfectly reasonable dinner) and get into the kitchen to use the veggies we have to make a good, tasty, nutritious meal.

Loved this format, especially for wok cooking, which is fast cooking. Prep is crucial and I liked how you made it work within the time frame. I love stir fry so I'm now leaning toward getting a wok since the non-stick pan can't get as hot. P.S. I also like your "regular" videos for some of the other dishes. Thanks.

YES!!! Much prefer this format! Please go to this as I can understand better the natural flow and process that can only be captured when you're actually doing it. It helps us to see your little things u do that u don't even notice u do. Some things we do the same and sometimes we pick up little handy tips. Love it. I love to see actual cooking in motion. The finely edited with all the bells and whistles can sometimes be a bit remote in terms of not actually seeing the process. I loved your last video with the tacos with your friend. Just seeing it happening. And the addition of Lorn is a touch of family. I've always got my sig other in the kitchen with me when I'm cooking. First of all - I LOVED THE VIDEO! I love watching you work and talk and I really love Lauren 😊 This format is great for beginner home cook. I think people who struggle in the kitchen can benefit from watching every step of the process. So, YES, this videos should be on this channel however I feel if they are labeled correctly would be easier to find for beginners. I am not a beginner cook, so I love watching your takes on recipes, and not chopping and wiping. I hope that makes sense I know you like the feedback. So combination of the previous format and the detailed videos are all so fantastic. Bless you both.

I really like this format and it is my new favorite cooking series here on KZbin! I would love to see more of this content. It is very realistic for weeknight cooking, I tend to panic last minute when I cook on a small time frame, and this gives me a bigger idea how I should time my cooking! Nice seeing your wife involved more in the video! Can you please put more Asian dishes or Casserole dishes.. Thank you!

Yes, we Chinese people salt as we go or as needed too, or we pre-season by marinating the ingredients, and sometimes we only salt and season close to the end. And it's totally cool that you mentioned wok hei, it's a must for me for any stir fry!!! 🤘

Love this style of video. You should do more like this. If you need to cut down the length of the video, cut out the mis en place and tell us how long it took you to do. Maybe even offer the prep as a side video -- in fact, I'd like to see and hear your recommendations for pre-cook preparations. I feel certain you have lots of recommendations and short cuts that would be useful. The key learning for me from this video is put all my shelf-stable asian sauces and seasoning in one container for quick access. I also must say that videos that include Lorn typically are my favorites. I really like how you interact with her, and how she sometimes prompts you for that little bit of information that you sometimes forget (e.g., how many grams of rice was that?). How is it you only have 1.1M subscribers - should be 10 times that by now (I'm working on it for you). Keep up the great work. Between you (and Lorn), Ethan C. and Mike G., there's nothing more I need . . .

I’d love videos like this every now and then. It’s nice being able to watch how you manage the kitchen time and space. I do love the brevity and pacing of your usual videos too though

Great video! -this is something I struggle with when cooking: nesting tasks and having multiple things "on the go" to combine into the dish in an efficient way. There's a lot of stuff here I can take away. I naturally tend to really compartimentalize cooking and do one thing after the other instead of re-organising it to save time. The results are good, no qualms there, but it just takes me longer than necessary and the thing is I only realise this after the fact, not when I'm in the middle of doing it and could, possibly, rethink and adjust...

Love this format. Feel free to mix them in with your regular videos. This recipe is going to save us a lot of money on Chinese takeout. I can see how easy it would be to change up the protein and veggies but use the sauce as a base. Thank you.
