The whole "carrots make you see in the dark" thing was a ruse by the allies to prevent knowledge of radar from leaking out. Pilots just had such good eyesight from eating carrots, allegedly, that they spotted the enemy just that much more easily. The myth, however, stuck.

It "WAS NOT COMMON KNOWLEDGE" that carrots were good for eye health prior to World War II. That was Government Propaganda to encourage the public to eat more carrots and to find other ways to use them in recipes to help ease food shortages as most fresh vegetables in most cases were not rationed.

Carrots can be used exactly the same way as sweet potatoes for making pies and cookies and cakes add carrot pie is actually very tasty I like it better than sweet potato or pumpkin pie

I have eaten so many boxes of the "classic" Kraft mac and cheese with the orange cheese powder, that it isn't even funny. And it was GOOD. We used to look forward to Kraft mac and cheese, and my parents loved it because we were poor, and it was a cheap way to bulk up a meal. I still make Kraft mac and cheese, although i forgo the orange powder version and get the cheese pack version instead. Or, i simply make my own from scratch.

vegetables were off ration during WW2 and people in UK were encouraged to grow their own those lucky enough to be issued a prefabricated Anderson Shelter which relied on the dug out earth being piled back on top, even planted vegetable seeds in this layer of transplanted soil most of the inner city public parks had huge sections of them designated as allotments and were used for veg production

Carrots.. the one vegetable i prefer never to eat. Although it's fine in carrot cake or mirapoix. Mac and cheese. My parents livec through the Great Depression and WWII. I think they had no further interest in mac and cheese by the time they had me in the mid 50s. It was never served as so called "comfort food" - we kids only were served it on some occasions when the parents were going out to dine. Mom would add extra cheddar. As for today, i will only order it if appropriate veggies or something are added. And the goopier, the worse. Anti-comfort.
