Great skill. Sushi restaurant will hire this guy in a heart beat. His knife skill is impeccable, the cut is precise and clean, he almost doesn’t waste any meat at all. The birds will not be happy with the waste that this guy released, because like I said, there was almost nothing leftovers for them to eat except the skin and the bones. And look how clean his work station is, top required condition for any top sushi chef to become

@@haydenirwin5427 but if a dull knife is too dull to cut, you wouldn't need stitches... therefore, a dull knife "could be" safer. An easier wound to stitch is a terrible way to describe "safer"

The elongated thin scales give better hydrodynamic flow... it's partially why the swordfishes ( Swords, Sails and Marlin) are among the fastest true fish in the ocean.

Sharks have something similar skin. It is good for the streamlining of the body. The fluid follows the little "teeth", there is no flow disruption. Makes the fish more efficient. It is only a few percent of the efficiency, but a marlin, one of the fastes fish ever, needs that. Greetings from Germany 🧡🧡🧡

The first cut is in fish port, yo make it fresh, it must be fast. Then, buyers take fish to their store, cut carefully snd cleanly to make sashimi. As it is not cheap, clean and fresh are basic requirements.

Almost like they have quills or feather not scales. Caught one down off Baja Mexico years ago. beautiful fish & was fun to catch. The people from the town our boat docked at ate good that night. As courtesy we donated it to the boat captain & he cut it up right there on the dock & handed it out.

Without having handled marlin skin myself, I was surprised at how much it looked like the filamentous feathers you see on something like a New Zealand kiwi bird. Not the kind of scales you'd expect to see on a fish...

Обычно, они их не точат и не правят. Есть специальный человек, что этим занимается. Затупился нож - отдал ему, себе взял точно такой же, но острый....

я тоже обратил внимание, толстый обух, миллиметров 6-7, вероятнее всего углеродка, спуски примерно с трети лезвия, заточка, судя по тому, что он разобрал марлина не правя, вместе с костями, скорее всего в линзу.

i notice the japanese are much more refine when they cut fish compare to the chinese. it seems like the japanese have more elegance in cutting their fish.

Best knife work I've seen in a while. The way the camera kept focusing on the eye or the removed fins made me think the dude holding it was trying to make some kind of low key peta statement, though. Mission failed if he was, I got paid today and I'm gonna get me some swordfish steaks.

I got the impression that he (or she) was trying to convey a sense of freshness because the eye was pretty clear and not very cloudy which I was taught is to be avoided in fish because it can indicate that the fish is pretty old, etc.
