When cooking on a kettle with a SNS, I've found that the heat hovers around the edge of the grill. The area closest to the fire is the coldest. The hot spots are on the outer rim of the grate. I feel like the heat from the SNS goes straight up, then banks down the edges.

Professional cook Joe. Appreciate that process on the sticky rice seems like you nailed it. Julienned ginger was top notch, need to check out that combo with the red onion. Next time you're in NYC, be sure to check out Hanoi House for some insanely good Northern Vietnamese Beef Pho. I think you could find a way to elevate it to BBQ if you tasted it.
