This is a treat that is fit for a king. The vital elements of hygiene and taste are present; spices are used to the minimal with a few going into the rice. Even one bay leaf and a couple of cinnamon sticks will do. The curd and the mixed-masalas assured that the marinated chicken was well prepared absorbing the essence of the masalas, before it was mixed with the par-boiled rice. I loved the sprinkling of browned onions over layers of rice that added a dash of authenticity to the dish. I'm ready for the mountains if my share of Biriyani is assured.
