I get a lot of comments about the 3-2-1 in the title and let me clear this up if I can. I used that in the title because of the 3-2-1 ribs that are popular. However, you obviously would never cook a chicken breast for 6 hours. But I did do the method of 3-2-1 ribs by cooking, wrapping and cooking again to set the glaze. Times will vary and if you stay at about an hour, and give it 10 to 15 minutes to set the glaze, it should turn out great! Mine did. But grills do vary so if you know your grill, you will know how long to perform each step.

DUDE.......all your moisture leaked out during the 1 hour foil wrap. Chicken breast is a lean cut so brine then smoke to 165. Omit the foil steam part.........i'm just saying 🤨

I have the1100PRO, actually its going as I type this.I thought I would try your recipe out, so, your chicken on the Pit Boss is for dinner. I am a newbie to this realm of cooking, looked at so many pellet grills, was dead set on the Weber until I really researched it, ( I work advanced critical care so I researched a lot of science theories in college). It’s 14:39 here in Tennessee, chicken has been on for about 15 minutes. Come sit a spell as we say in the south, you will never leave the table hungry. God Bless, do be safe and enjoy life, its really short. FYI, I was at Walmart today and looked at the very grill you are using, I do love the 1100 PRO.

I hope it turned out as good as mine did. It was really an experiment since every video out there is 3-2-1 ribs :) And I regularly do chicken breasts like the ones in my other videos. Braising or wrapping the chicken in foil helps keep breasts juicy. Anyway, thank you for trying this. I have made them like this a few times since this video, usually on the weekend and they've always turned out. I love doing chicken on the PS1100, fast or slow they always turn out. I'm assuming you are referring to my Blackstone at Walmart? Another Great addition! That thing can cook literally everything but it can't smoke :) And I love the storage it has. Anyway, thanks for watching and trying this recipe out! I really appreciate it.

Add about a 1/4 to 1/2 cup of apple juice in the foil stage as well. I've never used butter, but hey, I'm game. I'm going to try later tonight for 4th of July

Thank you! Yes, you can add juice or broth and it would be delicious too! The 3-2-1 was just to get attention from the 3-2-1 rib guys but of course that's way too long to cook a chicken. Do a lot of smoked chicks and turkeys whole and just breasts .. never did the 3-2-1- method. .but as boneless /skinless is thawing out ya betcha will be using this method with my favorite rubs and sauce this evening, ,thanks for sharing.. looks awesomely yummy. Liked and subscribed .

Thanks for checking this out! Obviously you don't actually cook 3-2-1 with chicken. This was a fun experiment and it did work. I did 1-1-30. 45-45-15 would also work. You just don't want to over cook it. I hope you enjoy it!

Thank you and congratulations on your Laredo 1000! This method was really a let's see how this turns out. And it did turn out very tasty for me. I've had another person tell me hers was dry. So knowing your grill and temps to use is of great help before trying this method. Chicken is generally cooked at higher temps and lower times. Since you are new at smoking, I would just do chicken at a hotter temp for a shorter amount of time until you are familiar with your new pellet grill. I have several other video's on how to do chicken in a pellet grill. I'm sure you will love your new pellet grill! I know I love mine!!!

Thanks Brian, this was an experiment for fun. Definitely do not go 3-2-1 🙂 1-1-30 minutes worked and the chicken was still good but I'm thinking doing 30-30-15 (minutes) is better! How do you know how long to cook your meat using the Pit Boss Tailgater?

There are several factors, like what type of meat, how much meat, how you like it. Rare, medium rare etc. And of course beef, chicken and pork require different interior temps. And usually it's not a time factor, it's temperatures, looks, feels. An important tool is having an instant read thermometer. And a meat probe thermometer for long cooks. Search KZbin and or Google for what you are cooking for a good understanding of what you want to make. Then it's time to do it. Over and over and you'll catch on. And learn how your tailgater performs. You'll do great!

Not sure if you'll see this, but stumbled onto your video and made this today. Pit Boss Pro Series, almost 3 hours in and the meat was still at 145... and mama was ready for dinner... so I had to blast it with 300 temp to get it to 165... so it came out a bit dry. The flavor was great, but it likely would have taken over 4hrs to get to 165IT. Thoughts? Recommendations?

Oh wow! Your chicken should have just about been done by the time it came out of the foil. Wondering, did you use an instant read thermometer? I assume you did, but had to ask. The only thing I can think of that might make a difference is the size of your Pro Series? I did these on my Tailgater and the area inside is a lot smaller. I also have the PS1100 and temps differ for sure. For example, if I smoke at 200 on my 1100 the temp on the grate may be lower than on the shelf. On the shelf which is closer to the top of the dome runs more consistant. A good example is I just did some no wrap ribs at 225 degrees and did them on my shelf and it took just under 5 hours 45 minutes. I've done them at 225 on the grate and they took 6 and a half hours. Hope that makes sense. So maybe on a larger pellet grill, you could go at 225 then at the end to set the glaze, bump it to 250? Now, I ususally do low and slow over the weekend when I have time. During the week, set your pellet smoker to 350 and your chicken breasts will be done in about 30 minutes. I did a video Smoked Chicken Breasts In Minutes if you want to see it.
