Simple and quick cake recipe, 3-6-9 (369) with strawberries, cherries or other seasonal fruits. No scale, cheap and delicious. Three, six and nine refer to the number of expresso cups (80 ml) of the main ingredients.
Ingredient:
• 3 eggs
• 3 tablespoons 82% butter, which we will melt (75 g)
• 3 expresso cups with milk 3.5% fat (225 ml)
• 6 expresso cups with sugar (400 g)
• 9 expresso cups with all purpose flour (450 g)
• One sachet of baking powder (10 g)
• A teaspoon of vanilla and a teaspoon of lemon flavor
• 500 g of seasonal fruit of your choice, washed and cleaned. I now had strawberries and cherries, but you can choose something else.
Preheat the oven to 180 ° C (356 ° F) heat up and down, without fan.
Prepare an oven tray of 30X33 cm; line it with baking paper.
Put the 3 eggs in a large bowl and add 6 cups of sugar (~ 400 g). The cups must be full.
I know it looks like a lot of sugar but remember we make a big cake. If you like it less sweet you can reduce the sugar.
Mix until the eggs become whitish and very frothy. Then add the vanilla and lemon flavors, melted butter and milk (225 ml).
Replace the mixer with a whisk and mix these ingredients. The composition will become very liquid. Don't worry, that's the way it should be.
Then add the baking powder (10 g) and flour (450 g). Add it in 3 batches and mix until incorporated.
Pour the dough into the oven tray. Place the fruit cut into suitable pieces on top. I used strawberries and cherries, but you can use sour cherries, plums, peaches, apricots, and so on.
Place the pan in the preheated oven for about 35 minutes. Of course, it can take more or less depending on your oven.
Allow to cool then serve.
