RECIPES: COCONUT HAYSTACKS Ingredients: 1 (14-ounce) can full-fat coconut milk 1/4 cup granulated sugar 2 egg whites 1 tablespoon lemon juice 3 cups shredded coconut 1/4 cup flour 1/4 teaspoon kosher salt 1 1/2 cups semisweet chocolate chips 1 to 2 teaspoons coconut oil Steps: 1. In a small saucepan, add sugar and coconut milk. Turn heat to medium high and cook until reduced by half and thickened, 30 to 40 minutes. Allow to cool. 2. Preheat oven to 350 degrees. 3. In a mixing bowl, add egg whites and lemon juice. Whisk until whites come to stiff peaks. 4. In a large bowl, add shredded coconut, flour and salt, and stir until mixed. Stir in sweetened condensed coconut milk and mix to combine. Fold in egg whites. 5. Scoop heaping tablespoons of mixture on a parchment-lined sheet tray. Bake for 18 to 20 minutes, until tips are golden brown. Remove from oven and let cool before moving off of sheet tray. 6. In a saucepan on medium heat, fill one-third full with water. Bring to a simmer. Place heatproof bowl over saucepan. Add chocolate and heat for 1 minute. Stir until melted. Add 1 to 2 teaspoons of coconut oil and stir to combine. 7. Remove cooled macaroons from parchment. Dip bottoms of cookies into chocolate, covering bottom and halfway up the sides, leaving the top exposed. Place back on parchment paper and let chocolate harden. COCONUT LENTIL CURRY WITH CAULIFLOWER & SPINACH Ingredients: 2 tablespoons coconut oil 1 large yellow onion, diced 3 cloves garlic, minced 1 inch fresh ginger, minced 3 tablespoons red curry paste 2 cups lentils 2 (14-ounce) cans coconut milk 2 cups cauliflower florets 2 cups baby spinach leaves, tightly packed 2 cups basmati long grain rice, cooked 1/4 cup cilantro leaves, to garnish Lime wedges Steps: 1. In a cast-iron skillet over medium heat, add oil. Add onion, garlic, ginger and salt and saute for 2 minutes. Stir in red curry paste and saute for another minute. 2. Add lentils and toast until combined. Whisk in coconut milk and bring to a simmer. Let cook for 15 minutes until lentils are al dente. 3. Add cauliflower and continue cooking until both lentils and cauliflower are tender. Add spinach and stir until wilted. 4. In a bowl, add rice. Ladle lentils and curry over rice. Top with cilantro and lime wedges. COCONUT LIME BAKED CHICKEN Ingredients: Marinade: 3 cloves garlic, grated 1 inch fresh ginger, grated 1 (14-ounce) can full-fat coconut milk 2 packets (1 tablespoon) Sriracha 1 tablespoon soy sauce 4 whole sprigs of cilantro, torn Zest and juice of 1 lime 2 tablespoons brown sugar 1 teaspoon kosher salt 1/2 teaspoon black pepper 2 tablespoons fish sauce 1 1/2 pounds boneless, skinless chicken thighs Salad: 1 packet (1 teaspoon) red pepper flakes 1 packet (1 teaspoon) sugar 1/2 teaspoon kosher salt 1 lime, zest and juiced 3 tablespoons coconut oil 2 tablespoons chopped cilantro 6 Persian cucumbers 1 mango, cut into small cubes Steps: 1. In a large bowl, add all ingredients for marinade and whisk until combined. Add chicken to the bowl, cover and refrigerate for a minimum of 4 hours. 2. Preheat oven to 425 degrees. 3. Pour chicken and marinade into a cast-iron skillet. Roast in oven for 30 minutes. Remove from oven and place on stove top. Turn on heat and bring to a simmer until sauce thickened, about 1 to 3 minutes. 4. In a large bowl, add red pepper flakes, sugar, salt, lime zest and juice, and coconut oil. Whisk until emulsified then add cilantro. Cut cucumbers and add to bowl along with mango and toss to combine. 5. Add chicken to a plate, top with sauce. Serve alongside cucumber salad.

Just made homemade Bounty! Shredded coconut, coconut milk (1:2 ratio) and maple syrup Mixed and pressed into a loaf pan. Then cutting it into pieces and dipping it in (dark) chocolate. Boom 💥

Love the Video as always ! You can get your Bougie ( lol) coconut oil at Dollar Tree ( if u have one near you ) it comes in a small bottle but plenty for a few recipes and it's non GMO and good coconut oil . I use it for cooking and for Carrier oil for my essential oils as well as my skin hair etc . Great for the price ! I thought I would pass that on to those of us who were on THE STRUGGLE BUS! LOL. KEEP THE RECIPES COMING HELPING ME OUT A LOT THANK YOU!

I recommend looking up "Lemak Chili Padi" it's essentially blended chili/onion/garlic cooked with coconut milk. It's a really filling dish that's served with rice/bread and should be really cheap.

Making coconut milk is really easy and cheap! Doesn't last too long on the fridge, but getting ground coconut can be super super cheap, and you only need a blender and adding warm water 👍

Sushi bowls! Dress cooked jasmine rice with a little sugar and rice vinegar. Top with inexpensive sushi ingredients like avocado, cucumber, carrot ribbons, edamame, scallions. Add toasted sesame seeds, soy sauce, and Sriracha mayo (I use vegan mayo mixed with sriracha, a little sugar, soy sauce and a few drops of sesame oil). You can get some of those seaweed snacks and crumble those on top too, if you want! Yum!

Coconut oil can be cheap. I get a 54 oz jar of it from Costco for like $18. It's also a healthier diet. Foods cooked in it lower their glycemic impact.

Edit 1: while melting the chocolate, the coconut dulce de leche log completely hardened. One less thing to worry about. Fun fact: if you aren’t paying attention, grab the coconut cream, add the sugar, turn the heat to medium, stir it all together, then stand over your son’s shoulder while he refuses to do his homework, allow a bit of time to pass, then walk back over to the saucepan, you get coconut ducle de leche... which I’m currently forming into a log, then covering in chocolate, and hoping for the best in the fridge

You could try using brocolli or leafy greens (think spinach, kale, ectra) instead of cauliflower, and instead of lentils, you could use grains or legumes (think rice, beans, buckwheat, pasta)

Please don't dump dry lentils straight into your food without washing them. There's sticks and rocks in there on top of regular dirt. Also soaking then for just an hour makes them a lot more tender.

you know my one complaint about this show? There are non-struggle items. The range and the pans they use are -not- cheap at all. Make something with a tiny cheap pan you bought at walmart on top of a half broken electric heating element.

He mostly uses a cast iron. I got a big one at the thrift store for like 5 bucks! You should be ok on any stove. Mine is electric (in an apartment) & have made some of his recipes with no problem.
