My parents went on dates to the local White Castle in late-30s Indianapolis. They began taking my brother and I in the early 50s (8 years before I saw my first McDonalds). These were special days. At 77, my first choice for fast food is a bag of sliders with onion chips (followed by Long John Silver and Rallys).

@@JimNortonsAlcoholism i don't know man, he looked like he gained some weight and maybe like he started smoking weed, which is understandable since it was pandemic and he just moved to a new house iric. probably just stressed. actually he kind of looks younger with the long hair. he looks a bit unhealthier but also younger at the same time. it's weird. but i wouldn't say he looks like he was on a bender. and he's still productive. i wouldn't worry. people go through these phases. it wasn't televised as much before we had youtube and vlogs and a pandemic that made us watch creators do diy vids at home mostly without professional lighting and make up which often would operate in a studio setting instead or at least some professionals in the background.

As a 7+ year in n out vet, you really did the double double justice kenji. Just so everyone knows you can always ask for extra spread for nothing on the side ;) you’ll never be able to perfectly replicate it without the specially made buns though, they are designed to toast perfectly and actually be stretchier and softer by heating, while just the edge stays toasty. Whole grill is the way to go my man and you nailed it.

INO alum here, too! Loved seeing one of my favorite nerdy chefs (even though he doesn’t like being called that) do a double-double justice! Though, because working board was my specialty, I had to slightly critique the fact that we’d remove the spine of the lettuce and add the tomato after the pickles but before the lettuce. 😉 But he definitely made his burger smile! 🍔

I worked at Best Foods in 1998, the factory in Quebec who makes peanut butter, mayonaise, Mc Chicken Sauce AND the Big Mac Sauce. I don't know about the spices but one thing for sure 100%, it's not relish in the ingredients, it's diced pickles. I unloaded trains filled with barrels of pickles...

As much as this was a giant love letter to all things classic burgers and burger history... if you add mustard to one of those sliders, isn't that more of a Krystal thing than a White Castle thing? Like that's one of the critical differences between the two. 7:32 It's hard to nitpick too much when y'all did so much work recreating these as accurately as possible. So much love. Have you all done a breakdown of the Krystal/White Castle situation? I'd watch that in a heartbeat.

Yeah, White Castle sliders definitely do not have yellow mustard and if you get mustard packets there, it is always dusseldorf mustard. At least in Chicago and the suburbs, anyways. Maybe it's different in other states.

Always fresh french fries hack: Tell them you want your fries unsalted. This forces them to dump a new batch of fries for your order. Ask for salt packets at the window. Rinse/repeat for the rest of your life.

In addition to loving all these guys already, and enjoying their recreation of these classics, we all sort of know Kenji has a history with Ramsay. Ramsay has said many times that the burger Kenji is making here, is his favorite fast food.
