Oh my gosh the last salad I’m making tonight! Although thinking of changing out the mayo for like an oat milk yogurt… I think it should work, I’m just trying to do minimal oil right now.

haha I'm glad you found that funny too 🤣 I was struggling! And that's how I was too! I'm an under-buyer so I put things like that off all the time because, let's face it, no one really NEEDS it. Recipes like this are totally doable without gadgets but having handy tools that shorten prep time and make it more convenient for me to cook makes it easier for me to make healthy meals at home. I don't have a ton of gadgets but the ones I have, I love and use often 😊😊 Glad you can relate! Do you have any kitchen tools you use a lot?

@@NikkiVegan I use my blender and garlic press several times a week, and honestly, I use my stand mixer pretty regularly, too. And we don’t have a microwave right now, so I use the toaster oven daily.

Haha well like with the chopped salad you can eat it with a spoon and the pita pockets are a portable salad....each of these salads are the kind where you get a little bit of everything all in one bite so they're really dynamic and flavorful...I thought that was fun lol 😊😊 Hope you enjoy!

For someone who’s not using oil, what would recommend as a substitute in the couscous recipe?

Quinoa ☺️ and use avocado instead of feta. For the dressing use whatever oil free vinaigrette or tahini dressing you like. Something lemony and Herby would be great! I had to go and try the chopped salad immediately, although I ended up having to do most of it by hand when my overly aggressive food processor reduced the first romaine lettuce to mush 😂. And you’re right, lots of black pepper is key. Absolutely delicious!!!!

Where you get the feta cheese?

This one is from Violife which I found at the local grocery store. Also Whole Foods has it and places like Kroger and Sprouts. Trader Joes has a new vegan feta that's supposed to be great and there's a brand called Follow Your Heart that makes a good one too! Hope that helps 😊

Since I don’t use oil can you leave it out and soak the sun dried tomatoes in hot water?

Good question! I would recommend subbing the vegan cheese for avocado and using a different dressing if you want to avoid oil. Something like my Vegan "Honey" Mustard dressing would be great 😊 nikkivegan.com/vegan-honey-mustard-dressing/

Omgggg these salads & dressings are so delicious !!! I just made the chopped salad substituted with chickpeas cuz that's what I had. Plus I added a little char grilled capsicum to the sauce.
