This is indeed a science and a legacy for them. Once on my way to Trinidad, I met a woman from India who expressed her love for the food made by the descendants of her people who came as indentured servants. She told me that there is a particular style of cooking from those people that no longer exists in India, hence the reason she loves and appreciates the food.

Please people when selling finished food products to the public please wear a head and beard covering and remove all jewelry including watches, chains, rings etc. These practices will prevent foodborne illnesses.

If there is anyone actually using animal fat AKA LARD in their roti, they should disclose that! And I don't doubt there are people who do that type of stuff in this country! Muslims don't eat pork. A lot of Hindus do not eat beef and even pork, depending on the Hindu. Then there are other religions and sects within the country that also avoid certain animal products like lard.

Lard is made from fat separated from meat. Ergo, the rest of my comment. Muslims cannot eat Pork lard, Hindus, beef/pork lard or any lard if they're fasting.

Worse yet those people who eating doubles everyday. My doctor says a roti is a meal for an entire day but you know West Indians we still will eat breakfast and dinner on top of that...
