I really loved this tutorial,, but could you please explain what a placeholder is?

Placeholder is something that it is used "temporally" to do animations over compositions. The file inside the placeholder comp will be replaced with the final file at the end or during the production. Here for example the "placeholder" is the Holographic logo comp, you might replace it with your own text.
