Wow! Some really great cocktails to make and add to my " arsenal " when I want something not so boozy. Long time viewer first time to comment on your channel. The cocktails that you have made in previous shows I have made for others and all were big hits! I'm from Oklahoma and I am a truck driver and when I'm home, I am a practicing mixologist. I have 3 guide books that I often reference but seeing how you do it puts a different spin and a bigger spotlight on the cocktail itself. Great job, I can't wait to make both the " Pop Quiz " and chocolate Negroni.

Nice cocktails! I cut off drinking at 8pm and usually go to bed about midnight - alcohol absolutely impacts REM sleep so people aren’t as rested even with 7-8 hours of sleep! I have my psychologist’s hat on today! lol! Sleep is one of my areas of clinical interest! I’d recommend an earlier nightcap versus a late night nightcap!! I care!

They do sound pretty good... I quite like a Flapjack Old Fashioned as a nightcap cocktail, a recipe I got off this channel some years ago; especially good as Havana Club 7 year old is quite easy to get here in the UK... There's something about a richly-flavoured, complex, stiff drink, a little on the sweeter side, that sometimes just really hits the spot at the end of an evening...

This past Christmas I was given my very first (!!!) actual book on cocktail making, the fantastic Cocktail Codex. I seem to recall a number of Devon Tarby's creations, and I think even a short commentary, made it in there. Damn, the Pop Quiz looks good. Pretty sure the liqueur shelf of my booze cabinet is packed solid, though. Need more shelf space...

Hey Leandro, a few videos requests: 1) A while back you made a few episodes with drinks created for the Game of Thrones show that were a ton of fun. Would you be interested in creating cocktails for The House of the Dragon as well? Maybe playing off of the Hightower, Targaryen, and Velaryon families / colors? 2) The 2024 Summer Olympics are coming up soon in Paris, France. It would be really cool to see an episode featuring some French bottles for the Olympics. Hope this provides some inspiration 😊

I made the Pop Quiz, and I liked the taste, but I thought it burned a little too much for my preferences because it's so alcohol forward. This wasn't really a surprise, because it has a lot in common with the Old Fashioned, and I feel the same way about those. I fixed the problem with extra dilution by adding a small amount of seltzer (which is what I often do with Old Fashioneds). I would strongly recommend the Pop Quiz to someone who likes Old Fashioneds but wants a little bit of a change.

Not loving the name “Pop Quiz”. That’s just what I want before I try to relax and lay down the troubles of the day and try to get some sleep, added anxiety. I would guess that although it sounds like it makes for a great nightcap, it wasn’t intended as such when it was named. Someone once told me that feng shui is very practical at its root, that “energy” is really dealing with our subconscious minds and worry. For example, if you put a heavy painting or mirror on the wall over the head of your bed, a tiny part of your brain every night will fret about the possibility of it falling on you. The worry might be so small that you aren’t even conscious of it, but over time it will have a cumulative negative effect. It will affect the quality of your sleep, leaving you tired, more likely to make bad decisions, perform a little sub-optimally at work every day, be more clumsy or more likely to get in car accidents, or become just a little more depressed. As your life becomes a little more difficult, that will make sleep a bit more difficult in a vicious spiral. A small thing affecting your mood before or during sleep can have large consequences. I think feng shui principles apply to cocktails, where experience is such a part of the equation. So a nightcap, which is supposed to be relaxing before bed, should not be a source of anxiety. And perhaps it isn’t a good choice at any time, because isn’t a cocktail for relaxing, if nothing else? Generalizing this a bit, I suspect there are a great many wonderful drinks out there that never become classics merely because they labor under the quiet burden of bad or poorly-descriptive names, names given indifferently, hastily, and/or without thought to their long-term suitability. It often seems modern drinks are named like yachts or thoroughbred race horses or a hobby winery, with a conspicuous consumption element, a hipster smarminess that says “I’m so cool I don’t have to give this a good name.” Or, perhaps poetry and drink creation are separate skill sets that don’t often align. More likely though, if you make a lot of drinks, and aren’t sure which will catch on, maybe you just don’t invest that much bandwidth on thinking of a good name. I suspect many of the classic names evolved with a democratic sort of process rather than delivered from on high by the creator as a fait accompli. I’ve heard chefs say that you eat first with your eyes, thus the importance of presentation. I think with drinks, we taste first with our ears, with the name. Perhaps it should be the norm that drinks go through a process of renaming, while still retaining credit to the originator of the drink itself. Then whichever name catches on is the best name.

20 drops per dash?!? Wow. And for Simon Difford it's just 4! Just to illustrate that dashes mean nothing. I wish everyone just provided the number of drops in recipes.

4 drops is definitely not a dash. Usually, a dash is equivalent to 0.625 ml. I just did a little experiment and 0.625 ml is 12 drops of water. But since water has a greater surface tension than alcohol, drops of alcohol (Angostura in my case) will be much smaller, around half in size. I measured 0.625 ml to be 12 drops of water and 22 drops of alcohol (Angostura in my case). So 20 drops is pretty accurate when we are talking alcohol based bitters. Also, based on my experiment, 2 dashes from a Japanese bitters bottle is equivalent to 0.75 ml or 26 drops of alcohol - slightly more than a dash, but it's pretty accurate to do 2 dashes from a Japanese bitters bottle whenever a recipe calls for "1 dash". Also, in the past when I have done 10 drops from a Bittermens bottle, it has looked like a lot less than a dash. So for all intents and purposes 1 dash = 20 drops of alcoholic bitters like Bittermens, Angostura etc. And (off topic) 2 dashes from a Japanese bitters dasher is roughly 25 drops.

@@leanrascal3155 You’re welcome. I guess it also depends on which dropper you are using. The drops may be different sizes from dropper to dropper so it’s all a little complicated. But I think, generally, 20 drops is the way to go if you want to equate 1 dash. 4 drops (of alcohol) is not a dash and neither is 10 drops (of alcohol). 10 drops of water is pretty close. Maybe that’s why a dash is sometimes equated to 10 drops. But since we are measuring alcoholic bitters and not water, 10 drops is not accurate. 10 drops from a Bittermens bottle looks like 1 dash (or less) from a Japanese dasher which means 10 drops is half a dash.
