Always love when you post!! An earlier video of yours helped me to decide to by an Ankarsrum. We love it! We've always used the roller, but after watching this I moved it a little further away from the side and I liked what it did as far as kneeding! We decided to make challah with it for the first time last night... the dough seemed really wet. Encouraged by your video, we went with our instincts and added extra flour because it seemed too wet. (The bowl was coated with a thin layer of dough - I started to overthink it wondering if it was the recipe and supposed to be that way - or maybe because we use freshly ground flour...) we just added more until the sides and bottom came clean and it turned out perfect! Thank you!

I had one many years ago and could not figure it out and so I sold it and I did get what I paid for it. It was before KZbin so there wasn’t anyway to get help. I was working full time and just didn’t have the time. I then bought a Viking mixer and I do love it.

Tip number 2 is surprising and explains a lot! I just got mine and I’m used to KA, read instructions and went for the dough hook for my sourdough. I only had one batch (one boulle) and it was really not coming together. I made the sandwich bread with the roller and it turned out fine. I might want to forget about the hook unless I am making a big quantity. Thank you!

I purchased an Ankarsrum mixer a few months ago kind of as an early X-mas gift to myself and while it was pricey I feel it was well worth the money. One of the big reasons is one I had never considered but which has come to be a major consideration for me. I can get up, mix up a batch of bread dough in about ten minutes and the only dirty dishes I will have to show for it are the roller and the bowl scrapper. It used to be when I made bread my kitchen was a disaster and there was flour everywhere. Now I use 1 measuring cup, 1 measuring spoon and a baking pan. I purchased a two drawer filing cabinet at the second hand store, sanded it down and painted it bright yellow and red, attached caster to the bottom and a wooden top to place the mixer on. All the attachments go in one drawer and measuring cups and what not in the other and I can roll it anywhere in the kitchen.

Thank you for doing this 👍 it's taken me about 15/20 batches of dough to finally see what the Ankarsrum can do ! I think your point No. 1 was spot on... It's nothing like a stand mixer....and I was getting frustrated. To be honest, I was going to sell it. But now I'm producing my best bread ever. The machine asks much more of the user...like you said...move the roller, watch and check dough consistency, etc. I read, on a dealer's web site, that the manufacturers added a dough hook when they introduced the machine to the American market. My dough hook remains untested, so I can't comment on its effectiveness either way....but since the machine was originally designed for the roller....I'll go with that. Thanks again for the video, I think it will help a lot of people (like me) persevere with their Ankarsrum.....and make better bread :) Best wishes from the UK 👍

My mixer just arrived about an hour ago and I can't wait to try it. I mainly wanted one to make pizza dough but will try other breads. I have very bad arthritis in my hands now so can't knead dough anymore and I was searching online for a strong mixer. I made the Ank recipe for baguettes using the hook. I’m a new user. I will try it again with the roller. Are liquid always added first? What type of yeast do you use? Do you proof it first? I also just got a mill (going in deep here! I have made bread by hand for over 30 years with conventional flour but wanted to learn something new). I know the difference between wheat varieties and my question (another one…sorry) is do you let the home milled flour rest at a certain point to absorb liquid? At what point? Thank you for taking the time to make these videos. They’re very helpful, encouraging and informative without being too long. I had a chicken named Attila the Hen once so any KZbin channels named after your feathery friend sounds good to me!

Living alone, and living with heart disease, I have to watch my carbs intake, so a small loaf of bread once a week is all I can have, and that can be done with my dough whisk. Did parts break off when it was running? My sister now has my 35 year Hobart-spec KA mixer and it is still going strong, but I wouldn't get a new one, not considering the many bad reviews that I've seen. May I ask which state you're in? Thanks so much! We’re in CT dreaming of warmer days, though today was beautiful! It seems like so many products aren’t made as well as they used to be, sadly. My first mixer broke during the kneading process of a large batch. The dough hook disconnected and broken little metal parts fell onto my dough! 😬 It was fairly inexpensive and non name brand so I got what I paid for 🤷♀️. Lesson learned! 🤪 Have a great evening! ☺️

Hi! Great question- I focus my channel on bread but use the Ankarsrum for so much more. It comes with the stainless bowl which is great for breads and a plastic bowl which is great for cookies, cakes & whipped items. It works magically for whipped cream. Either way the plastic bowl, it comes with two sets of beaters. It’s really quite versatile! The included cookbook is helpful for knowing what to use and when. Thanks for asking! 💗

Thank you for your video! Very helpful. I just got my Ankarsum and am in that learning curve. My dough keeps sticking around the roller so I have to stop to take it off. How do I stop that from happening??

Thank you so much! If the dough is working its way up to the top of the roller, the roller is most likely too close to the edge of the bowl. Adjust the arm slightly towards the center of the bowl and secure it. Then turn the Ank back on to test it out. If the dough is still climbing up, position the arm a little further into the center. That should do the trick! ☺️

Hi! I haven’t owned a KA myself, the one that died on me was a cheaper model off Amazon. It worked fine until I started making large batches of dough. I looked into the 7qt KA when doing my research as a comparable model to the Ank.

Hey, thank you so much for your videos! I just received my Ankarsrum yesterday and made a half batch of Toast Bread right along with you today. You are a fabulous resource for sure. I have a goal of making bread with sprouted heirloom grains but not drying and then milling, but using the meat grinding attachment to grind the just sprouted grains and go straight to baking. I've experimented with making my own botanical yeast sourdough starter from apples and raisins.. All of my experimenting has been done without a mixer so I'm thrilled to have the "assistant" . Have you made heirloom wheat bread from sprouted grain in this manner? I am so crossing my fingers that you have. Yes, your cute daughter and her feathered friend are a wonderful addition, just beautiful!! Priscilla

Hi! You’re very welcome! Is there a bread in particular you’re thinking of? I typically make sure I’m using an incredibly soft room temperature butter if I’m integrating it with the flours and other liquids aren’t present. It kind of depends what result you’re trying to achieve. Hope this helps to answer your question. Thanks so much!! ☺️

If you are talking about something like a Brioche then switch to the dough hook and make sure the butter is at room temp but not to the almost melted stage.

I bought mine from breadbeckers.com a while back and had a positive experience. I know Amazon is more efficient for the masses, so I posted a link in my description to the same model I have off Amazon which is especially helpful for those with prime. Those who have used the link I shared have not had any problems with their orders to my knowledge. They have a good and easy return policy as well. Hope that’s helpful! how does it work with small batches? i only have one kid and no food business, but make a lot of things that are single or even half batches, of bread in particular. i know the mixer has a smaller bowl option, but it doesn't accommodate the dough accessories, does it?

Hi! The second bowl that comes with the Ank is for batters, whips and beaters, so not really for bread making. The regular bowl can handle small batches with proper positioning of the roller during the mixing and kneading process. For myself, I really needed a strong mixer to support large batches. I think if you are only using it for small quantities you can probably find a more economical option. Unless you’d be using it for other baking and cooking needs, it’s very versatile. But if only for small batches of bread making, I’m not sure it would be worth the cost. Hope that’s helpful for you!

Hi! I have been looking at all sorts of Ank videos and one common these I keep seeing from KZbinrs (not you) is that the dough just sits stationary while the bowl spins around it. How are you preventing that from happening?

Great question! That’s where the dough roller and dough knife come in. You can manually adjust either as the bowl is spinning to move the dough. It sounds more like the roller and arm need to be repositioned though so the dough starts kneading and not just circling around. Let me know if that helps! Hi! Yes absolutely- the Ankarsrum comes with two mixing bowls and multiple beaters to mix doughs, batters and whips. It’s extremely versatile, well beyond what I’ve mentioned if you purchase additional attachments like a blender, meat grinder and pasta attachments. I mainly use mine for bread making, cookies and cakes. ☺️

I tried %70 hydration with all purpose flour for 20 minutes and it didn't come to gather. And i pulled it out and continue with my hands. I tried every thing with roller and wrapper in these 20 minutes but no way... If i would add some flour it would be ok. But i wanted to test it and didn't want to change the recipe. I love my Ankarsrum so i will not sell it but i start to think about buying a pro pizza mixer may be an Italian brand. Thanks for the video and looking for a high hydration pizza dough video with Ankarsrum. Greetings from Türkiye.

Nice video and beautiful loaves--your little one and her friend are beautiful, too! 🥰 Didn't it occur to you to watch any of the AnkarsrumUSA/Bread Beckers videos? You could've saved yourself a lot of aggravation--they've been using the mixer for a good 20 years and know it inside out. Lynn Junk is the Canadian distributor and her video is also extremely instructive. Incidentally, mine is an Ankarsrum family--there are probably a dozen among us and a few of my friends. Its engineering is brilliant and as to the cost--buy once, cry once.

Great video and thank you. It was very helpful. However, please do away with the background music. You don't need it. I kept wishing there was some way I could turn it down.

I don't love it I hate it! Had mine for over 2 years, and it just doesn't knead bread dough! This is the biggest waste of money ever. Alright I will agree that it is very well built, is very quiet running and can handle a large quantity of dough BUT....compare it to a spiral mixer it cannot compete. I wish I had never bought it! It's a fact my cheap (£75) Chinese made 1500watt food mixer does a far better job and in a quarter of the time!

Thanks for your immediate reply! I watched the video and took note of what you said. I was going to make two pain de mie loaves in Pullman pans yesterday so out came the Ank and after getting rid of the dust I decided to follow your advice and......I am so glad I did! In went the milk, salt and sugar for mixing. Next I started adding the bread flour, a large full at a time allowing it to incorporate before adding more. Before kneading I switched off the machine for 45 minutes this allowing the flour to fully absorb the liquid. Then onto knead and it was coming together fantastically, a little bit too dry so two splashes of water, a few minutes later and it was a marvellous non sticky beautiful dough! Far better than the week before's dough. Then I was into experimenting so I put the dough into my instant pot and programmed 'dough proofing' - 30 minutes at 30 degrees Celsius. Then repeated this after knocking back and balling up. Into the time for the final rise and bake. The result was astounding! SO THIS IS THANKS TO YOU! and a definite thumbs down to those you tube channels that give all the wrong advice including Ankarsrum themselves who just seem to confuse the issue!

I made the error of buying this piece of junk. It is utterly useless to make dough requiring a high gluten development like pizza dough or baguette. Prably ok for sandwich bread. If you are serious about bread, go for a spiral hook design like the Famag Grilletta multispeed.

I use the hook to make pizza and baguette dough all the time :o ! What are your issues with it?
