Looks delicious and so colorful. I can see this as a tasty summer meal accompanied by some sliced vine ripened tomatoes as a side and some fresh chapatis. Will definitely make this. I love the flavor of amchur and have experimented with it over the years to create some cultural fusions.

This is the recipe lots of people ask me for, I love amchur and I really think it’s that that makes it especially delicious. This is my favourite recipe from the book, based on how often I make it and how much people enjoy it. I like it especially with toor dal.

Good to see demonstrations from this specific book. The Aloo Sag with Panch Paneer/Mango powder works excellently. l do cook the potatoes until nearly cooked first however.

That third way of deseeding the pepper, if you keep the stalk, you can hold the pepper by it, push the part with the seeds inside and use it pull it out again. My father would do it like that.

Yummy, however, I'll be omitting the chilli and chilli powder (well maybe a pinch 🤏🏻) also the peppers, can't stand them 🙊 I'll substitute with my favourite food 🍄🍄🍄
