I'll copy and paste my other reply so you don't feel bad: The shrimp was dead, hence why it wasn't wriggling and whatnot well before it even touched the stove top. With fresh seasfood when it hits a hot surface the muscles contract. This only occurs with super fresh food where the neurons are still intact. Its also very common when adding salt to the food. I'll include a link to an example of octopus tenticles moving from the salt content in soy sauce. Although I should warn you its a little weird to look at kzbin.info/www/bejne/mqm0noKIlLZ_nLM The same thing actually happens with beef and other meats, just the muscles are a lot larger. That is why you should leave steak after cooking to allow the muscles to relax and become more tender.

This is a first class restaurant and one meal is around 100$. So if you've never eaten shit like that then go try it sometimes. Best food you'll ever eat because it's never ever been frozen and its fresh asf. Plus the shrimp was on ice before he cooked it. Not shown in the vid I know but you can tell it's cold as when he put on the flat top I did not sizzle for a good 5 to 10 seconds. Meaning it needed to warm up. Alot of science shit went on in this very moment for that shrimp to act like that but best believe it was not dead.
