Update to my last question (below.) First, Julie was SO right. This is the best fudge EVER. I made it last night and it is gone! Everyone that tasted it wanted more and more. Now to my question about golden syrup. We can, indeed, get it in the States via Amazon or other sellers, but for about $25. After reading its description because I wasn't sure exactly what it was, it sounds to me a lot like Molasses. Since I wasn't willing to pay $25 for a third of a cup of what I wasn't sure I'd ever use again, I used molasses to make the fudge, and as I said it tastes AMAZING! Thank you thank you thank you, Julie. I can't get enough of your wonderfully instructive videos and sweet, soothing voice. I bet you are a fantastic nurse.

I don't know how I missed seeing this video until now. I watched this from beginning to end and was even mesmerized at the stirring... it was so relaxing. I swear Julie, I think you could get us to watch anything. The really sad part is that after watching 51 minutes of the making of fudge... I get no fudge (ha ha)... but I bet it was yummy. You really do have a good heart and I so hope everyone at your job appreciated all your hard work. I hope you do more cooking videos. I really enjoyed this. Thank you and God bless!!

That does look good! Thank you for sharing. I will be sure and try it soon. I did not find the recipe so please check my notes. Here is what I heard/saw. 6 sticks butter-room temperature, 3 cans sweetened condensed milk, 1 1/2 cups white sugar, 1 1/2 cups of brown sugar-firmly pressed, 1/3 cup dark corn syrup (yours was called Golden Syrup), white chocolate (looked like an 8-oz bag) Directions: Put all items , EXCEPT the white chocolate, in a pot that can be heated. Make sure the pot is big enough that the mixture can be vigorously stirred and not slosh out. On very low heat to melt everything. When the mixture is no longer grainy the sugar will have dissolved. At this point turn the heat to medium low and bring to a boil. Once it boils, set timer for twelve minutes and continue to boil while constantly and vigorously stirring. After twelve minutes transfer it to a mixer and add the white chocolate. Mix on low until chocolate has melted then turn mixer on high for 3 minutes. While the ingredients are mixing, prepare pan by spraying it with oil then line with baking paper. After 3 minutes of mixing pour fudge onto papered pan (mixing bowl will be very hot so use a oven glove) and quickly push it into the corners. Press until it is level (sets very quickly so work fast). Cool until it is slightly warm then cut squares and store. Note: It freezes well. Can be cooled in the refrigerator.

Pretty much what I noted down too. I 'translated' some of it to my local measurements. It might need some adjusting to match Julies recipe exactly, but I just finished a batch and they're marvelous. The measurements I used was 375 g butter, 3 x 395 ml sweetened condensed milk, 320 g white sugar, 320 g brown sugar, 80 ml golden syrup (also mentioned in other people's comments as: light treacle, Karo, King Syrup and dark corn syrup), 290 g white chocolate. They're soft and yummy and I'm really glad she shared this recipe. I would like to experiment with it a bit though, I think cool variations could be with: chocolate, licorice, lemon, salt, or vanilla. And the batch is not as large as she made it sound. Already ate way too many! @Julie: Thanks for sharing, you're the best!

When I ran the butter amount through a converter (I'm in the US), it came out to 3.3 US sticks of butter so you might have a bit too much above. :-)

I have never heard of golden syrup, is that the same as molasses? Great tip about writing sweet on your spoon. I keep mine in a separate drawer, but when my husband does the dishes, he puts them in the wrong drawer!! I will come stir for you any time! I hate my electric stove, I burn lots of things because I forget the heat continues after you turn the heat off! Love seeing all parts of your life. Cooking, painting, birds and dogs. I had to laugh because I make sweets and bring them into work all the time because my husband is diabetic and he can’t have it and I love to make it. Win/win. This looks absolutely scrumptious, I am going to make me a batch tomorrow after the kids go to school!

I made your fudge after watching your country music star , Keith Urban win Best Entertainer at the ACM Awards show! Go Keith!! ANyway, the fudge turned out beautifully!!! It has received rave reviews so far. Personally, I'm a Cocoa Fudge fan. I never know how it will turn out - sometimes creamy, sometimes gritty. I'm going to try your tricks of getting rid of the grittiness before boiling and the Golden Syrup on my Cocoa Fudge recipe to see if I can consistently get it to be creamy. I know you said you don't use a thermometer, but you know your stove and exactly where you need to have it set for your 12 minutes of boiling. I was aiming for soft ball stage, but the timer went off before I got there. I let it go a little longer , but it was getting very thick, so I turned it off before it got to the soft ball stage. If you have a thermometer and could let us know what your temp is at 12 minutes, it would be helpful. Where I live, I have big swings in humidity and tme doesn't work very well. I've found I'm only successful with a thermometer. Thanks for the change-up. I"ll watch your cooking videos as well as your painting vids! And, I LOVE the birds!!

I may add some pecans to mine, or likely wait until the 2nd time of making it so that I can figure out if I need to compensate in any way for the pecans. While you were stirring, and stirring (bless your heart, tough job) I could almost smell the combination of the scrumptious, goodies all coming together in an oowy, gooey, pot of gold. Thanks for sharing such a proven and perfected recipe. I can't wait to try it myself. The elastic in my waistband; on the other hand, may be fussing and talking back. LOL
