When eren transformed into a titan for the 2nd time to fill the hole and to help the humanity and scout regiment, he actually lost consciousness,like he tried to eat Mikasa and his eyes were probably red that time, I don't remember. So in this VR, the red eyes probably mean that eren is not conscious and he starts eating humans. Hope that explains.
