It's because there are many different Chinese languages such as Mandarin, Taiwanese Hokkien, Hakka, Cantonese, etc. Speakers of these different languages do not understand each other, but they all generally use the same written language which is Chinese characters. So most television in Taiwan will have Chinese subtitles so that any speaker of any Chinese language can at least understand the subtitles in case they do not understand the spoken language. For example in the movie the older generation speaks in Taiwanese Hokkien instead of Mandarin. For those segments I had to read the subtitles because I do not know Taiwanese Hokkien but I can still read the written Chinese and understand. Vice versa for those who do not understand Mandarin. They do the same thing in Hong Kong too where they speak in Cantonese but always subtitles in written Chinese. Chinese is not just a single language, and it is very complicated! Lol
