I work for a large food producing multinational. The issue of expiration date really depends on the product. If it's something like derry (milk, yoghurt) it's quite important and you should pay attention to it. If it's processed snacks like cookies, candy or sugar bars, it just indicates when the product becomes less tasty, it's not an indication of safety unless it's been expired for more than half a year. When it comes to canned products, unless the can is broken, they are usually safe to eat decades after the official expiration, but the taste will be affected.
