You can also do a limited dissolve and/or merge by distance, if n-gons are OK for your use.

great tut, the only problem with this method is that whatever font you pick it could be a little distorted by the remesh modifier and in this case i guess there's nothing you can do but make a retopology from scratch to get 100% faithful result from the original typography

There is no "ALL EDGES" in VIEWPORT. Can you simplify the mesh more without distortion?
