the nuri lever has a pressure release feature. suspect the high turnover requirement will be resolved soon, if a cafe wants to go with a lever machine.

The only time I could see a lever machine working in a modern Cafe is if you are a small low volume specialty Cafe that does a lot with single origin coffee,otherwise for the reason stated about training staff especially considering most of those jobs are very high turnover, speed, ect you'd be better off with a traditional volumetric machine

do they still use levers in busy cafes in Naples and rest of Italy? Would be interested to see if levers are used in busy cafes today in Italy and Europe.

The Olympia Cremina is the best manual lever espresso machine on the planet....and it's not listed ! Also the first three of your machines listed are spring lever machines not true manual lever machines as your video title shows !
